I was wondering Why do Chefs let steaks rest? They all do it. I was just curious about what letting it rest actually does. :) Thanks sir! And thank you for all you contribute to us food lovers!
@Stormclouds777 when you cook meat you build pressure up, all the fibers tighten up as they cook. Resting the steak allows for this pressure to disappear naturally as so to keep the juices inside the meat. If you cut a piece of steak right after cooking you'll notice it'll "pee" everywhere and will lose color. All the juices get released because of the pressure. If you let your meat rest and THEN cut it all the yumy juices will be nicely trapped inside :) that's what I was taught, hope it helped

That kind of marbling is usually spotted on wagyu & I can imagine already how delicious it would be once cooked esp to the medium rare of my preference ^ ^

Hi chef john, i always remove the ends from my enoki and shimeji mushrooms because i feel they give off a similar to kerosene smell. The first time i made enoki and shimeji mushrooms, i didnt remove the ends and i sauteed them and there was extremely sharp kerosene like taste. It wasnt very pleasant. Just my 2cents.
I don't know, me being european, it just seems like such a waste of good steak to put it it between a hot dog bun. But maybe that's just cultural differences. Looks beautiful though.

@felixlaw yes, it's just hard to come home from a 12-hour day of tediously pouring sweat making dishes for people, then get home from that and prepare yourself an intense/expensive meal at 1am! hahaha if cooking for others, a get-together/party, it's great and fine and i love it, but it's hard to do it merely for yourself is all!
@DontTouchMyVicodin substitute maybe? There is a type of mushroom that is like the one shown, but MUCH smaller. And it has a nice taste, but I forgot the name...
