If I'm not mistaken...... what you actually have is just cheese curd. Ricotta is actually made from letting the whey (liquid that separated from the curd) sit at room temp for 12-24 hours and then heating that to near boiling causing the remaining protein to form into a fine curd. This fermented curd is actually the ricotta cheese. Nothing against cheese curd...it is very good can be used many different ways!
