I have about 4 managers per store this includes GM, ast Mg, Kitchen managers, front end managers and managers in training. So you dont know all the managers theat you do need sometimes I feel I dont have enough. Only one is a negro.

Yeah, it is a big deal that I can spell. It makes a difference when I go to a bank for a small business loan that the SBA can back up. It made a difference when I applied for a grant to start my business. It made a difference when I signed the lease for my office space and eventually bought it and expanded. She had to subcontract some accounting and HR functions out. She had to hire temp workers to come in and help her out in her home office and that was with 7 restaurants. Moving up through the ranks in the restaurant biz, she had to pass the serv-safe certification tests to be a manager. She had to be in a classroom setting all the time. You have to be able to read & write well to do that. She had to take business classes in accounting, economics, and marketing. She had to sign, contracts, articles of incorporation.

Dont tell anyone you can do it one of two ways. Pay it on their checks or pay them cash at the time of transaction, I liked my servers to get their money right away. If you are realy good you wont prosess alot of the transactions though that regester, or do what i use to do and have a second rej, that i use to ring sales up on, you know for tax purposes. Other wise my front regester was just that a front. 25% of my sales I never rang up. Better proffits that way lol.

So, you take cash from your register to pay your servers their tips? That doesn't sound very shrewd of you. Yes, I take cash out of the register to pay the server. My company is not cash straped that it cant pay it to the server who is much happier to get their tips the same night. the tip money does not stop or slow down my cash flow. I dont run my reast. like they are a credit card. most of my transations are cash, I prefer not to take credit cards some of my restraunts are cash only. again my average bill to credit card company for fees is around 1300.00 per store, thats alot
Nope. Don't believe you. You have 23 restaurants that work on majority cash? Sounds shady to me, since 80%-90% of restaurant transactions are plastic and you don't get the cash from them sometimes for 2-3 days. Somebody that's close to you may manage a restaurant, but I don't believe for one second that you do. Credit card fees are usually about 2.5-3%and most restaurants take that percentage out of the tip that's written in on the receipt for tax purposes and pay out on a separate check.

However the first and best way to control your inventory is through build to sheets. if you do it right you can tell when there is product missing.
Yes security is always important especialy when the kitchen staff is trying to get things out the back door, all thats basic common sense, yes all the trash is locked up, yes trash only goes out 1 at night.
There's no such term as "build to sheets," either in restaurant lingo or the textbook. In inventory management there's LIFO, FIFO, or weighted averages. Every night when you close down the register and count your drawers and you run inventory reports to see if everything matches up, or if you need to put in an order for small businesses. Larger businesses usually have software that automatically sends in a vendor order if items are low. Someone with 23 restaurants would know and have that.

Yes to a point you are right if you are like a chain restraunt. If your restaurant is of diffrent styles of food then no. Not all are computerized at least for ordering.
I will still tell you that a physical count everyday is the better way to go. Sure you can do counts through your invoice reconcliation but much faster to do inventory physicaly. Most easy to do the problem is geting your managment to do it right. I am not a mcdonalds or dennys rest, that has it all laid out for you.
Of course a daily physical count to make sure they have enough inventory for day to day operations. That's common sense. What I believe you probably heard somebody say is that you bill the vendor by an inventory sheet, which makes sense. What Oscar was asking you about was your inventory management system and that is usually FIFO for a restaurant due to perishable goods. You could look that up or ask your friend about it, since you don't know what it means.
I dont need to look up or ask a friend in fact i would think alot of the questions you ask cant even be found on the net, I am not sure becauser i dont look. You sound to be someone who has learned buissness from collage and again you cant learn it from a book. You just assume that someone uses all the progams you learnd in collage. Also, you have to report what your wait staff earns in tips for tax purposes. Usually, wait staff underreports tips, but when the tip is on a credit card the restaurant is taxed on that and the credit card company gets their fee. So, you would end up losing money if you paid cash for credit card tips. So, what you're saying really doesn't make sense, if you're really shrewd, like you seem to think you are.
yes you do have to report their tips of course the server has to report them to you so you can report them. Better yet all you have to do is report enoungh to bring the servers wage up to minimum wage. In fact when servers ask me how much should i declare i say take your hourly rate and subtract it from minimum wage and times that by how many hours you work and just declare that amount.

Out of my 23 rest 16 of them have cash advance machines inside or in case of my down town rest have cash advance machines within 200 feet walking distences. guest are informed we do not take checks or credit when they come in and there are sighns posted and on menue. I do this to be a cash only buisn at the same time i dont lose sales. I have had no problems with this system. people go right to the machines and take out money.

Lucy and Idaltu have no DNA which can be tested to see where they fit in the biological family tree as opposed to the evolutionary one. Mitochondrial Eve is simply the result of DNA analysis determining the state of human adaptations and mutations which were in effect at a particular point in time. The lack of mutations in a MtDNA specimen determines the position on the evolutionary family tree and nothing more.

You see, when you've ACTUALLY been successful in business, like I have, you want to share what you know, i.e. grant writing, business ethics, tax law, economics, business law, etc. That's what I teach to people like you who have DREAMS of success, but never actually achieve it. I'll tell you just like I tell the high school kids I mentor, you can't be successful if you don't want to work hard for it. Real success is built on a solid foundation. Yeah, it is a big deal that I can spell. It makes a difference when I go to a bank for a small business loan that the SBA can back up. It made a difference when I applied for a grant to start my business. It made a difference when I signed the lease for my office space and eventually bought it and expanded. It made a difference when I was determining if I wanted to hire other accountants use contract workers/consultants. I had to weigh the pros and cons of it. I had to write it out.

I'm a CPA & CFM. 20 years ago, I did fraud enforcement in the restaurant & liquor business. We worked very closely with the IRS back then. She had to subcontract some accounting and HR functions out. She had to hire temp workers to come in and help her out in her home office and that was with 7 restaurants. This person talking nonsense about being "simi retierd" is just insulting to people who really work in the restauarent biz.. She was constantly interacting with people. Moving up through the ranks in the restaurant biz, she had to pass the serv-safe certification tests to be a manager. She had to be in a classroom setting all the time. You have to be able to read & write well to do that. She had to take business classes in accounting, economics, and marketing. She had to sign, contracts, articles of incorporation.

Just got back from voting. You made a big point last night that went over my head because I was tired. I can't think of one state that doesn't require passing a certification test to run a restaurant. Owners need to be able to read and understand English in order to sign all the necessary legal documents. Same rules apply to sidewalk vendors. Obama has been working very hard since January 20th to get things done and stabilze the economy, with very little down time. He can't win for losing. He's either trying to do too much too fast, or he's not doing enough. Bush didn't win the popular vote, like Obama. He was made President by the Supreme Court. But, even in that situation, he had an 80% approval rating when he went to war with Afghanistan. People gave him two terms to fail, not 10 months. Those judging him now, are ignorant.

What temperature is hot food stored in the refrigerator? Huh? How high is dry food stored from the floor & why? What pumping system does your restaurants use? Federal laws mandate that you post which signs? Do you file 1065s or 1120s? Do you file WCs with STs? As an owner what's the national trend for CGS? These are not simple online questions. You have to be in the business to know the answers. (I don't expect intelligent answers from you, just more ingorance.)

My inventory method is build to sheets, they are used in all the restraunts, more acurate, when you do them daily you can check for stolen product as well as the items that are low.

Dont tell anyone you can do it one of two ways. Pay it on their checks or pay them cash at the time of transaction, I liked my servers to get their money right away. If you are realy good you wont prosess alot of the transactions though that regester, or do what i use to do and have a second rej, that i use to ring sales up on, you know for tax purposes. Other wise my front regester was just that a front. 25% of my sales I never rang up. Better proffits that way lol.

So, you're a tax cheat AND A liar and you think that makes you smart. You still haven't answered the question of how you pay out tips from credit card transactions? So, you take cash from your register to pay your servers their tips? That doesn't sound very shrewd of you. Since you have a "front register," it seems like you would want to wait until you get the cash from the transaction in order to pay your staff their tips. Doesn't that affect your cash flow not to do that?

Yes, I take cash out of the register to pay the server. My company is not cash straped that it cant pay it to the server who is much happier to get their tips the same night. the tip money does not stop or slow down my cash flow. I dont run my reast. like they are a credit card. most of my transations are cash, I prefer not to take credit cards some of my restraunts are cash only. again my average bill to credit card company for fees is around 1300.00 per store, thats alot

Nope. Don't believe you. You have 23 restaurants that work on majority cash? Sounds shady to me, since 80%-90% of restaurant transactions are plastic and you don't get the cash from them sometimes for 2-3 days. Somebody that's close to you may manage a restaurant, but I don't believe for one second that you do. Credit card fees are usually about 2.5-3%and most restaurants take that percentage out of the tip that's written in on the receipt for tax purposes and pay out on a separate check.

Boy ohh , you are talking managment learnd from books, most people with buisness degrees have no experiance of what running a buisnees is.
However the first and best way to control your inventory is through build to sheets. if you do it right you can tell when there is product missing.
Yes security is always important especialy when the kitchen staff is trying to get things out the back door, all thats basic common sense, yes all the trash is locked up, yes trash only goes out 1 at night.

There's no such term as "build to sheets," either in restaurant lingo or the textbook. In inventory management there's LIFO, FIFO, or weighted averages. Every night when you close down the register and count your drawers and you run inventory reports to see if everything matches up, or if you need to put in an order for small businesses. Larger businesses usually have software that automatically sends in a vendor order if items are low. Someone with 23 restaurants would know and have that.

Yes to a point you are right if you are like a chain restraunt. If your restaurant is of diffrent styles of food then no. Not all are computerized at least for ordering.
I will still tell you that a physical count everyday is the better way to go. Sure you can do counts through your invoice reconcliation but much faster to do inventory physicaly. Most easy to do the problem is geting your managment to do it right. I am not a mcdonalds or dennys rest, that has it all laid out for you.

Of course a daily physical count to make sure they have enough inventory for day to day operations. That's common sense. What I believe you probably heard somebody say is that you bill the vendor by an inventory sheet, which makes sense. What Oscar was asking you about was your inventory management system and that is usually FIFO for a restaurant due to perishable goods. You could look that up or ask your friend about it, since you don't know what it means.

Since you ask, yes I do have a Master of Business Administration that I'm very proud of and has helped me be very successful, thank you for noticing! I worked very hard for it. :-) Something you might want to take note of and imitate. I have been a professor of business and the only time my students laughed was when I told jokes in front of the class to lighten the mood. But, thanks for giving me examples I can use in my business ethics class when I teach again next year.

Also, you have to report what your wait staff earns in tips for tax purposes. Usually, wait staff underreports tips, but when the tip is on a credit card the restaurant is taxed on that and the credit card company gets their fee. So, you would end up losing money if you paid cash for credit card tips. So, what you're saying really doesn't make sense, if you're really shrewd, like you seem to think you are.

yes you do have to report their tips of course the server has to report them to you so you can report them. Better yet all you have to do is report enoungh to bring the servers wage up to minimum wage. In fact when servers ask me how much should i declare i say take your hourly rate and subtract it from minimum wage and times that by how many hours you work and just declare that amount.

Out of my 23 rest 16 of them have cash advance machines inside or in case of my down town rest have cash advance machines within 200 feet walking distences. guest are informed we do not take checks or credit when they come in and there are sighns posted and on menue. I do this to be a cash only buisn at the same time i dont lose sales. I have had no problems with this system. people go right to the machines and take out money.

You own them in your head. What's really said is that you could actually own a business, if you do the work. You could get your GED to start off. I gave you examples, like Dave Thomas. Research what successful people have actually done. Since you're not good at reading, you can get books on tape and one day you COULD actually own a restaurant. When she expanded she had to to meet with her board to go develop a business plan. She had to meet with bankers to get loans to expand. If she hired a contractor to fix something at one of the stores, she had to be able to read it. She had to understand HR & FMLA issues. She went to NRA conventions every year. Some days she worked 16 hours a day. There is NO WAY this person has 23 restaurants. It takes too much intelligence and hard work. You have to LIKE and RESPECT people to serve them.

If you haven't already, when you get some time, please read a book called, "A Continent for the Taking: The Tragedy and Hope of Africa," by Howard W. French. The writer's family lived in Africa for 20 years because his father set up a hospital in Abidjan. One of his father's professor's was Dr. Charles Drew. It's a very interesting book and has a unique perspective because his is a black American and lived a long time in West and Central Africa.

My great uncle was a Maj General in USAF. He went to Harvard Business school. He was told that there was no way he was going to make it through that business program. He graduated one of the top 5 in his class. He travelled the world as a member of the military and a patriot and foreigners saw him as an American. He was called "boy" and "n****" here.
