well it depends which model of subway car you're talking about. The type of car on the left of the video (R62) and the one on the right (R142) both have these square like designs because this division of the New York City subway (the IRT) was built before most of the subway, and had smaller trains. Years later, more lines were built, and the subway cars they use are wider and and more rounded.
I like square trains more!

hah thats cool, it's so wierd that in New York the subway trains are square and in London (where i'm from) the underground trains are round xD
