In fact, the point was to simply show how much force is needed to break a spleen...without the protection of muscles and such. The rest of the show went on to detail how other parts of the body (like the muscles) protect it.

Hmm, the blood-flow part of the story in the beginning is crucial. I've found that blood pressure is crucial in minimizing impact of hits. Why? More blood flow = more water to absorb the impact. This is why Men can get hit harder than Women, and Young people harder than Old. Having a dead organ in there simply does not accurately simulate the impact on a living organ full of pumping blood.
