I'm using an 8 inch chef's knife which is an "all-purpose" knife. I have other knives but favor 2 - my chef's knife and serrated knife.
There are 2 kinds of boning knives - flexible tip and stiff tip. I'm using an 8" chef's knife, not too big and the blade relatively thin. Whatever knife is used, as long as it is sharp, it'll do the job safely and efficientl.
Chicken? Looks like an atomic turkey.

This is not about how to debone a chicken. She did a great job of cutting the chicken into pieces but she did not debone it.
