I'm just a trainee chef but I have some curious questions on this video. Like for example: why do you use the wing in the mixer rather than the dough-hook? And why didn't you let the dough proof a second time after you put up the loafs?
I'm just curious because if there's some secret I'm missing I want to know it. :P
Hi, this kind of bread allows you to make it with this technique, not standard but industry practise, give it a go.

Nice vid but could do without the MUSIC, MUSic, Music, music... Some dialogue instead would be more informative.
