Nancy, here's an easy way to cook a potato as if it's a baked potato. Poke the potato with a fork all over, put it in a deep bowl of water, and microwave it for about two minutes. Done! :) Now just add butter or cheese, or if it's a sweet potato, add brown sugar. Yum!
Nancy, I found my potato starts two weeks ago and planted them. Will they grow in the wiinter if I put plastic over them and compost? Will they just mold? Can I over winter them?
amen to that, Potatoe skin is very healthy!!! i love baked potatoes with all the delicious topings. your so fortunate to have a good free clean dump, we only have thrift stores here in hawaii and NOTHING IS FREE here, even at our dump, they want money outta ya if you want a clothes or 2nt hand appliances!! sad!!!

You know what I want to learn to make? Potato Bread. I just adore it, and I haven't a clue how to make it. I make yeast bread already, so it shouldn't be hard to learn, but Im guessing its called Potato Bread for a reason, is there such a thing as Potato flour? I need to figure this out.
@Oreocremerocks I used to use water I'd boiled potatoes in for the liquid in the bread. It's got stretchy properties, is that gluten? Anyway, it may call for some potatoes, too. Or potato flour.

Add the flour a cup at a time and make a soft dough. Place dough on a floured board and knead it about 10 minutes. Dough should be smooth and elastic.
Let dough rise in a warm place until doubled, covered. Knead a few minutes and divide the dough into 2 loaves. Place dough in greased bread pans and let rise until double.
Bake at 400°F. for 20 minutes. Reduce oven to 300°F. and finish baking for another 25 minutes.

@BallsDangleton if you PILE on the soil or mulch, you'll get potatoes growing all the way up the stem! My friend fills a forty gallon drum with one near the bottom and as it grows, adds soil till it's full. Then he gets a whole bag from one potato!! amazing.

I LOVE baked potatoes, stuffed!!! Know what else they are good for? Curry. I get the House brand curry cubes at the store, chop the taters and onions and other veggies, toss in shallow water, melt those curry cubes, and dinner is done in 10 min. Try it if you have not.

Boil potatoes until tender. Mash and add the cup of potato water to a large bowl.
Add yeast to a small bowl with 1 t. of the sugar and add the warm water.
Add the sugar, melted butter and salt to the mashed potatoes. Stir. When the potato water mixture is cool, mix in the yeast.

2 medium sized potatoes
1 C. potato water
1/2 C. butter
3/4 C. sugar
2 eggs with milk to make 1 C. liquid
2 t. salt
2 packages yeast

Nice hat! And you're correct - potatoes are good food. I like to make French fries in bacon grease - makes it a lot tastier & adds natural saltiness!
