Well, instead, his brain tells him that he must be somehow attached to the wall and the reason his fish is slipping is due to gravity!:-)

Uhm...you might want to think twice about that. Has anyone realized this is self-contained? There is no one pulling the fish, it's falling by gravity. He's sitting on an incline and the camera is angled along with him. He puts the fish on the plate and it slides down the angle of the table. He picks it up and repeats. Penn and Teller did something similar to this on SNL in the 80's. :-)

Attaching a little wire to the fish and having someone pull it would be far too much trouble, when they can turn him sideways, attached to the wall, gel his hair, so it doesn't hang and looks normal and have him stay in that position for hours?

Triplesod, it's not he simplest way to do it - it's the creative way to do it considering he's probably doing the entire video on his own. Penn and Tell did it before in a similar fashion. It's nothing new.

It's definitely not FALLING. Turn your monitor to the side and you can tell that it's not. It slides along the table and doesn't bounce off the plate. And at :21 it flips head to tail along its side, which it wouldn't do if it was falling with gravity. HOWEVER...I can't tell if something is attached to the head or the tail, because it gets pulled both ways. Maybe there's a strong magnet in the fish and something under the table pulling it? I feel like he always puts it same side up...

It's simple, the fish is being pulled by a wire, whether he is doing that with his leg or there is someone off screen is of no important. The daft thing is that anyone would believe the best way to do it would be to have him hanging by his side, that just shows no common sense.
