There are tones of varieties and ways to do this, so try different ones...I usually saute the onions and cabbage before putting them in. And yes takes a while, but lasts you for a week or two.

I always wanted to incorporate beets into my diet but didn't know any good recipes. I've never tried that borscht soup but I already know that I will like it..............mmmmmmmmmmmmm!!!!!!
Zdrastvuitye Lara, I find once beets are cooked you don't even need to peel with potato peeler...it removes too much beet. You can push the skin right off with your fingers, without losing (wasting) too much of the beet flesh.
Try with Sunflower oil Bruce...pay homage to Ukrainian's National Flower!
when i make a form of Borscht, and call it Purple Haze. I pre-peel the beets and cook them in some cheap but good Pinot Noir. Then i use purple cabbage, purple onion, purple carrot, and even a cherokee purple tomato. i also use some thai basil. i use the same spices

This recipe is great, although I would seriously recommend to eat the Borscht with cream, it's almost doubles the taste.

Romanian borsh ( not borscht ) is very tasty too. All the balcanic food is tasty but it is hard to find the right vegetables here in America.
