  • @enduserzero There are many canned sauces which would be fine for OWL phase like Old El Paso. I believe their green sauce would be Induction Friendly. I have also uploaded an acceptable sauce in my spanish rice video.

  • hello there, love your page. i live in the uk and the enchilada sauce contains milk powder, wheat flour and corn starch. can it still be used for atkins? cheers for any help :)

  • @MancJenster Not for Induction even if it is relatively low carb, but for OWL, it would probably be OK. If you are looking for an Induction friendly sauce, chick out the low carb chicken enchilada recipe posted here, which features my sauce in it.

  • @askunique Check out the video called "Atkins Diet Recipes: Low Carb Enchiladas and Faux Spanish Rice (IF)." It talks about the options you have, and there are low carb wraps you can use if you are in a latter stage of the diet. I hope it helps...

  • @RoseEverBlooming I am always glad to share the recipes I develop. The real low carb genius are the ones making low carb baking recipes. Cooking recipes like mine are often more about conversion of high carb recipes or figuring out how to achieve the same flavors in a low carb method. Low carb baking is often more science than experimentation. :-)

  • @heart3817 Depends on the heat level of the enchilada sauce... If you pick the mild enchilada sauce, it wouldn't be too hot.

  • Dude, you took out the chicken from the package, stamped it and put it straight in to the pan WITHOUT WASHING IT PROPERLY. DDAMNN MAN. CLEAN THE CHICKEN FILET BEFORE YOU PUT IT IN THE HOT PAN

  • @Sieberliebangbang Ok the caps are a bit much. I think you can make your point WITHOUT ALL THE DRAMATICS. I know some people are paranoid about the germs or other material that may be on the chicken, and if I hard purchased Tyson chicken as opposed to from my local butcher, you might have a point. However after working in a kitchen and with other cooks for 20 years, you are in the minority, and I also doubt a quick dousing in water would have little affect to dirt and other particulate.

  • I am so glad to have found your vids... I am a diabetic whose numbers were 250-300 usually, after my first week of induction my glucose level is now 115-120.... and thats was only after 1wk.... and my BP is down also....... you have great recipes and easy to follow.... question... how long can one stay on induction phase of diet I haven't read that in the book.....

  • @LUCANDIS I have a video called - how long to do Induction -- that attempts to answer this question. The short answer is that one can do extended Induction for a really long time. Some people can do it for years, while others should move on to OWL phase shortly after 14 days is up. It has to do with insulin resistance and happiness with the foods.

    I personally did Induction for a year, and after that year had my blood work done. The only thing it suggested I should do is eat some nuts.

  • u are awesome. i just made the chicken enchilada and it was fantastic!! i read some of the negative comments on some of your other videos from some idiot about how he doesn't want to hear about your diet and your marathon, u handled it very nicely and i am very glad that u talk bout those things it is very encouraging to me and i am sure to others that are trying to lose and the recipes are fantastic and really help me stay on low carb. i have lost 35 pounds so far and still on induction Thanks

  • @Mermaidengirl The haters will always hate, but if I can educate a few semi-open minded ones or use their criticism as education for others, I am open to their essentially meaningless critiques. I will still continue to do low carb, still continue to prove them wrong by doing marathons, and still prove them wrong with my excellent continued health.

  • @bowulf thank you so much.I was binging last night for cookies and milk. High addiction on both, big fan of oatmeal and nuts. Gonna have to look for many low carb cookie recipes. As for milk, will skim do. Im trying to get. Im trying to tone ab muscles.

  • @angelaragon19 Remember skim is just as high in carbs as regular milk. If you think you need milk, unsweetened almond milk is the way to go or check out my "Missing Milk" video I have posted on Youtube.

    I don't know of any Induction legal cookie recipes except for a flax one my wife made years ago. The cookie recipe I have posted here is not Induction legal.

  • @livinglife63 That is the problem with cookbooks to me. They are typically dry or unannotated to how the recipe really turns out. All recipes read the same, and little insight to how you'll really like the recipe. That is one of the reasons I like Linda's Low Carb website and why I hope people like my recipe videos too.

  • @lilyflowertulip Mexican is one of the easiest meals to make low carb as most of the key ingredients (tomatoes, onions, peppers, garlic, chili seasoning, Cumin) are all very Atkins friendly. I hope you like it!

  • I think your recipes are really tasty-looking and they seem easy. My mom is a diabetic and lots of people have suggested to her that she should try Atkins to lose weight, but she won't budge... Maybe with a recipe like this i can convince her :)

  • @wcwify Some days however... :-D Yes, it would have been unusual. "Smacking the chicken" is much more cathartic and certainly less likely to induce visits from certain state offices like DHS.

    I prepared this recipe for dinner last night. It tasted delicious!!! I added extra cumin powder and chili pepper flakes to the chicken. My son mentioned that these enchiladas tasted better than the ones you get at the restaurant. Thanks for the awesome recipe!! Its a keeper.

  • @sarahbarah20 Actually if you are hungry you should eat.  Playing games like no eating after a certain time if your body says you are hungry will only lead to possibly short term success but likely ultimate failure.

    The appetite suppression of Low Carb will prevent mindless grazing. After 211 pounds lost, I think I know the appropriate time to eat for me.

  • Can't get enough of this dish! Just some FYI on my recent (yesterday) blood tests after being on Atkins for 7weeks. Trig. 29 , down from 67, HDL 66, stayed the same, LDL 135 which is down from 185. The previous results were taken around Christmas last year. I was not low carbing back then. Started back on Atkins March 9th and lost 11 pounds. Maybe I have finally learned this has to be a lifestyle. Bought the new book last night. Keep us educated Kent.

  • @keyahnee I had had a salad earlier as a snack, but with the veggies in the casserole or dish, I wouldn't have needed it. I had 1.5 servings of the dish, and saved the rest to top a salad the next day.

  • @bowulf Kent I wanted to ask if you are knowledgeable about ketone test strips. I got some last night and according to the strip I am releasing moderate amounts of ketones (moderate is the 3rd level up on the chart it lists negative,small,moderate & large) now does this mean that every movement I make I am burning fat?

    Any info you can share about the test strips would be wonderful. Also I have been trying hard to work out an hour everyday sometimes im just too sore and can only do 30min

  • @jailstop Any registered amount on the ketone strips signifies fat burning and ketosis-lipolysis taking place. This can be dietary fat or storage fat, but it is a good thing. I do have a ketosis vs. ketoacidossis video that talks about the strips.

    I tell most people take it easy the first 3-4 weeks with exercise, and do what you can. It takes awhile for the body to acclimate to burning fat for fuel to meet the demands of exercise.

  • @bowulf Yeah I am getting close to being in my 2nd month on the diet whats really crazy is I started mine on the same day you started yours :) I find the treadmill to be the best for me when it comes to exercise plus its easier to call for help from home if something goes wrong. I used to hear runners talking about a runners high and I thought they were full of shit *lol but its true if you sweat for a long period of time you do get a very high peaceful feeling similar to college pot *lol!!

  • @alkiller1992 Yes, with the caution that Sugar Free 7up has aspartame in it. Aspartame causes stalls in some people. Max 3 servings per day (total artificial sweeteners)

    BTW is beef jerky okay to eat? because i ate abit today and then i saw at the back that there is 5g sugar. i didn't know because i took the original beef jerky not the added flavors ones (didn't know there was sugar on the orignal ones)

  • @alkiller1992 I would really suggest you watch the "Can I eat this video?" It really explains what you can eat and makes you self-sufficient in terms of what you can eat and teaches how to prevent making the same mistake on the beef jerky in the future.

  • @banded2live I hear you there. Boredom is definitely a killer to most diets or ways of eating. Bringing in some ethnic foods or spice is sure to liven it back up. Using a commercial sauce makes me a bit uncomfortable, but it's relatively low carb and adds to the simplicity of the recipe.

  • Wow, this looks goooood. Will flattening the chicken breasts out make them more tender and not as dry? I made some boneless breasts in the oven last week, and they were so horribly dry. (It was a pizza chicken recipe from Linda's Low-carb website, it called for flattening them, but I cut that part out just to save time and mess.) Thanks! :)

  • @ArchieLovesMe That is one of ideas behind smashing the chicken is that it makes them really tender (breaks the bonds of the muscle) and reduces the cooking time (which can also make them less dried out). With the chicken as flat as you smash it to be, it will only take a couple minutes on each side on a medium-high pan.

  • @recess1987 I should have that posted later today in the video description. Remember the fat content in a low carb diet should be high (typically 50-80% of the Calories) as you still need to fuel body processes with something.
