Order your pie very very well done, a little burnt on the bottom,and big burnt bubbles on the top, thats how old school pizza was served in the 1960's, it has a whole new taste ,like it used to taste. The pizza box will have olive oil stains on the inside like they did years ago. Most pizza places dont go well done,check the bottom of your pie,and tell them alittle more welldone , brown and alttle grey to black is what you want. Trust me , it tastes like it used to taste.
@1952kid i have eaten many pizzas in italy coz of my heritage there, and 95% of them were made in stone ovens and burned just bit coz its harder to control than an electrical oven. i like the bubbles. the concept of italian cooking is minimalism. my father tells me that in the older days they didnt put much on a pizza, mostly only anchovies maybe olives, otherwise plain pizzas, but if u go out in the world u see pizzas overloaded, thats not the original concept
Pizza in NYC has declined greatly, since the late 70's [2 slices + small soda = $1]. Today, the sauce is watered down. The cheese is bland and starts 3 inches away from the crust . The oven is set too low, making the dough soggy and the crust undercooked. The slices are always laying around behind the glass counter--rarely fresh. When was the last time the cheese was stringy and stretched a few inches, after you took a bite and pulled the slice away? Think about that!
