  • Is Mr. Lagasse saying he was a mentor to Julia Child -- how old is he?

  • Julia made an apperance on Emeril Live in the year 2000. Julia herself came behind the counter to make hamburgers. Julia wanted to add thyme to her hamburger, but Emeril didn't have any. Instead her offered her his "Essence" to which she promptly said "NO!". It was embarassing at how unprepared Emeril was for Julia's visit. He also forgot to add cheese to her cheese souffle and put it in after it was baking and it didn't rise. She said to the camera "when you make it at home it WILL rise".

  • @baritonebynight I saw that episode! Ye, Emeril is ok, kind of a hack. no where near the caliber of Julia or Jacques. Jacques Pepin was also on Emeril live around 2007, no comparison, Jacques kicked butt!!

  • @saugusg16 If Julia Child is coming on your show to make hamburgers, you READ how she does it ahead of time and have whatever she wants waiting for her on a silver platter. I never cared for Emeril before that, but yikes...I didn't realize how bad he really was.

  • @baritonebynight Yes,definitely. He is bad. I mean, the guy basically is a good talker/host and look where it got him, but marginal cook at best. I'm a huge Julia and Jacques fan and also a Chef myself. I've studied both volumes of Mastering the Art of French cooking for years. He should at least checked in the book first. Jacques was on his show in 2007 and made a terrine along with lobster souffle (with ease!!) Emeril was nervous as hell assisting him and he made a terrine from cold cuts! Ouch

  • @saugusg16 You are so right. He is more of an entertainer than he is a chef. Julia was a true cooking teacher and exceptional home cook. I learned to cook in the late 1990s when the foodnetwork was still worth watching. I learned from Julia Child's reruns and ended up buy Mastering I and II and also from watching Sara Moulton's Cooking Live. You can't beat Julia and Jacques as a cooking team. I couldn't change the channel fast enough when Emeril came on.

  • @baritonebynight Yes, he's just a good charmer and knows how to interact with the crowd. Those 2 volumes of Mastering TAOFC are the best and most accurate! Julia was a true teacher! Thats for sure. Jacques also and is still a Master technician to this day! He would run circles around Gordon Ramsay. Thats great that you have those books! That really get you in cooking shape. Yes foodnetwork channel is losing lots of respect! It's all about them channel...

  • @baritonebynight You have to check this out. It's Jacques deboning a chicken for a Galantine. Just Amazing!! Query on youtube here of -> Pepin Debone Chicken Galantine Ballotine. I get errors when trying to add the link

  • @saugusg16 I was inspired by Pepin, so I made a boned chicken pate baked in its own skin. I certainly didn't do it as fast as he did, but he is the real deal. Let Emeril sell his processed foods and let the real cooks teach those of us who still want to learn.

  • A Word from the Wise. Listen carefully to what Emeril has to say and, for most of you, adjust your hat size.

  • whoa. the photo showed a "teen" emeril. why is his face hidden? lol
