at least this is a video that shows de-boning. Most seem to have it muddled and show how to joint a bird. The legs on this video were messy and i was looking for one that left the bird whole rather than cut open along the back - still better than the vast majority of videos!
Practice makes perfect. If you have a large family gathering, do several chargrilled or stuffed roast deboned chickens yourself. You'll get a lot better. I did a couple in catering school, then worked in a kitchen where for 3 hours on 2 of the work days my only job was deboning poussin. You'll get hella fast at it :P
I'd say it's a worthwhile enterprise getting work experience in multiple fields of catering from butchery to poultry to pastry. Your quality of life will improve forever

He made it look so simple! I don't think I'll ever debone a chicken in 5mins or less. Give me another 10mins and I'll still be stuck halfway.
