  • Craig, Well said brother. Love what you had to say about home brewing not being a competition. It is what we want to brew and the quest of looking for something new and different that we haven't had. At least that is me take on home brewing.

    As a side note, you said that your Sierra Nevada Pale Ale clone turned out a bit hoppy? Just as a thought, have you ever had Sierra Nevada Torpedo IPA? Maybe that might be a little closer to what you made.

  • So you are reviewing a Sierra Nevada clone, yet you have never tried Sierra Nevada? I think that would be a wonderful addition to the review, if you were able to actually tell if it tastes anything like Sierra Nevada

  • I think a good phrase to start throwing around to naysayers is "brew your own brew." Fermented beverages have been around for thousands of years, long before anyone even understood enzymes, yeast, or really any other biochemical element of brewing. They just knew if you put this stuff together, waited, and then drank the liquid, you would get drunk. It's just that simple. Good Job, and Brew your own brew!

  • Craig, I am new to brewing and have seen most of your videos. Thank you! It has given me hope. Now, when you talk about the 1lbs crystal, I'm assuming you steeped that or is that thrown in with the wort.??? This is going to be my first batch, so we will see how I do. Any help is appreciated.

  • You & steeljan both are good folks with this hobby/craft. But beer isn't all that cheap here. Craft beers (like the cloned one you discuss here) are $8-$12 per six pack! Even the usual culprits are $15-$19 per case of 12oz'ers. My cooper's kit can make 60 of those 12oz bottles for about the same. And,as you folks have been saying,looks/tastes better (more of a "craft" brew) than miller's,coors,bud,etc. And I don't like how some of the all-grain crowd call extract "kool-aid".

  • Not sure how my Sierra Nevada clone should look in the carboy at 2nd stage fermentation. Should it be clear or somewhat cloudy? I have a picture, but not sure how to get it to you

  • @polom79 That depends on how you made it and if you used anything to clear it. I'm not hung up on clear beer. Nothing wrong with a bit of haze.

  • Yes, Craig, you are right that beer can be pretty cheap here in the U.S. Recently at my grocery store they were selling cases of beer for $20.00. So that's 83 cents per beer. So home brew may not be as cheap as that, but pretty close. The beers for sale were not just crappy beer but a few Mexican beers and some popular American beers. Homebrew will taste better, and it IS fun to make home brew. Just the satisfaction of knowing we made it for pleasure is worth it. It's not just to save money.

  • The lacing on the brew looks quite nice! The color is a bit darker than SNPA (it may just be the camera) and if you're not used to hoppy beers, that could be the explanation for the excess hoppy-ness you experienced, but for me... SNPA is just the tip of the hoppy-iceberg, if you will.

  • @Craigtube: What I'd suggest to improve this bad boy is the yeast. I've noticed even unadulterated strgiht coopers kits can be vastly improved with good yeast.

    the good news, is the SAFALE yeasts are amazing, and as easy to use.

    3 yeast varieties will work for almost all beers

    Safale S-04 tastes amazing in almost any english beers.

    Safale US-05 tastes amazing in almost any US beer

    Saflager S-23 is a great lager yeast (remember lager takes longer and needs to be very cool)

    After moving from the UK to New Zealand I couldn't find a beer that made me happy to drink it. So I went back to Home Brewing. Something I last did 15 years ago. Now I have made many types and used many ways of brewing. Like you I feel what every way you brew beer it's still beer. I have had many good kits and many good whole grain brews. At this time I have 4 brews on the way and 2 are kit's one is malt extract and the last is whole drew.. Roll on Christmas

    Seeing as you were doing a clone...Just wondered why you didnt use the actual hops that are in Sierra Nevada Pale ?

    (bittering hops Magnum & Perle, finishing hops Cascade) as mentioned on their website.

  • @GranulatedStuff It's hard for me to obtain some hop varieties here, as it is some grains as well. I usually only brew with what I have easy access to, because those are the ingredients that I will buy repeatedly. If I have to go out of my way to get something, I probably won't use it.

    ahh I see. I was guessing it was that the bittering hops were reasonably interchangeable in that they dont affect the aroma profile. (which I why I was puzzld when TeslaMachine suggested swapping out the Cascades !

  • @GranulatedStuff No, but shipping across the border is expensive and with hops being a food product, I don't know if it's even allowed. We don't have major grain and hop sources in Canada. We have to source from the US.

  • @moedogger21 I have two 5 gal kegs and three 3 gal kegs. I need some replacement O rings for one of them. I hardly ever bottle. I'm doing a real Lager this winter, which I will bottle in glass for three months before tasting.

  • I agree with Ozzman.. leave the 5 min addition for aroma and decrease the bittering hops @ 60 mins...this will make a wonderful well balanced ale with a nice aroma...JMO

    Looking at the video Craig, the two most important things you don't want to stray from and replace are the Hops and YEAST while doing a cloned recipe. Especially the yeast. Not that coopers is a bad yeast, it just doesn't fit the bill for a well known and regarded beer such as the Sierra Nevada IMO. I think the recipe would do much better using a belgian type hop instead of a cascade. Again - IMO.

  • @ACTeslaMachineDC Hey Tesla. I agree with you. Problem is that I don't have easy access, even at the "bike ride away" place, to these ingredients. I got the hop substitution from a long time brewer, but the yeast.. I just had to use what I had access to. The Nittingham yeast from the "bike ride" place scares me. I have it brewing in a batch right now and it smells weird. They get it in bulk and give it out in little zip bags. It's that or Coopers. Cheers.

  • @CraigTube I was reading where with the notty - the temps of the yeast have to be almost meticulously monitored and the yeast handled with close care..Notty could suffer from temp shock, (there's the cool down steps of the yeast) etc etc.. Just seems like for now, I'd choose to use another yeast as well. Although I have used it successfully in the past, I would go with other strains that are out there that dont require the closely monitoredprocess that notty seems to bring with it. Cheers Craig

  • Hi craig IMHO I would not take out the last 5 min hop addition! Thats what gives you the nice aroma. If you don't like the hoppy bitterness of the beer then take out some of the bittering hops like add only .75 oz of bittering hops for 60 min.

  • If that grows on you there are 2 great hop bombs that come to mind....Hop Stoopid by Legunitas and Hopsecutioner by Terrapin. Either one can be cloned easy enough or probably purchased in singles.

  • Good commentary - I have been homebrewing now since 2007. I started out making Coopers kits from a can and over 3 years later I still brew canned kits. I love the beer that it makes - I love the variety - I love the simplicity and love the taste. For beginners don't be intimidated - experiment and have fun. I have made some great beer with a Can of coopers graft and some corn sugar. Great beer can be made by any brewing method - just have fun and enjoy your beer

  • Cooper's yeast is a bit fruity/estery for the style. You should try a cleaner yeast like US05 or Nottingham to get a little closer to the true flavor profile.

  • Craig, Have you ever tried brewing two cans of Coopers kits together instead of adding sugar to the one kit? I am sure that you would want to use a kit that is very light in style. Maybe a pale ale kit + an amber or brown ale kit. It would be an interesting experiment. Keep posting the great videos.

  • @surrealtech Actually, I have a video of me doing this. (Easy Home Brewing - Second Addition). You can pick any kit you want, and just add a second can of un-hopped extract. I give it a bit of dextrose just for a kick.

    Sorry havent gotten around to mailing you that SNPA yet. Glad to see you made a clone though. I laughed my ass off when you were blown away by the hops. Theres a guy who lives by me and got me started into drinking better beers, and when I couldnt take the hoppiness he said "its a journey". SNPA is not that hoppy for American Craft Brews...well there are MUCH hoppier I should say.

    Maby you just dont like hopps that much, but glad your gonna stick with it a while. It grows on you. :)

    I'm not sure if anyone has chimed in on this, but instead of using Northern Brewer for bittering next time, you can just go ahead and use cascades considering they're very similar to perle. Also, the neutral Coopers yeast should work just fine considering it's a neutral ale yeast. Good job, the beer looks great.

    He has done something that other people haven't. People need to make a $100+ $30 minimal ingredients US purchase to start. Who cares how people like their steak or hamburger cooked?

    Go to Canada and find beer in a grocery store. Find a case of native Molson at "The Beer Store." Pay over $40 US for the equivalent of Bud Mil or something.

    Home Brewing... the name says it all, when people are making a spagetti sauce, are they refering to spagetti sauce experts? not that im aware of, you just make it as you like it.

    Same thing with beer, knowledge comes from experience, it's nice to have a fellow showing you the basics to start in the craft and then experiment on your own.

    Like Jimmy Hendrix would say... "Are you experienced".

  • You go Craig. Your videos another refreshing (no pun intended). I would also like to see the recipe and process for the SN-PA. I like mildly hoppy beer and even a very hoppy beer now and then. SN-PA is usually on tap at my local homebrew store.

    I brew extracts and now an apprentice to an ALL GRAIN Master! I have bought 2-3 times his equipment and have 3 boil pots mashtuns etc.. I will still check your channel and watch your videos for tips I have missed along the way.

  • I think the 5 minute hop addition should stay where it is. why not play around with your hop variety a bit and see what aroma you get?

    I've moved to all-grain as I think the final product is better, and the process appeals to my engineering background. I am NOT better than a kit brewer.

  • @jturie BUT......Nige has always been clear that his problem lies solely with pre-hopped no-boil kits with a pound of sugar. Pre-packaged recipes bought online are NOT kits. A can of unhopped extract, grains, hops and an hour boil is NOT a kit.

    How bout burying this dead horse instead of continuing to beat it?

  • Congrats on the clone Craig. SN Pale Ale is one of my all time favorites. Cascades is one of my favorite hops, and the signature characteristic of this brew. If you make it again, and it's too hoppy, cut down on the bittering hops (or the time boiled), but not the 5 minute hops. They mainly add aroma, and that aroma is fantastic IMHO. Dry hopping too adds another dimension to the aroma. It will grow on you. Thanks again for the video.

  • Craig good video. The beer looks like Amber Ale. In the future I wouldn't put crystal 60 in a pale ale or ipa. In my beersmith software crystal 60 is more for porters and brown ales. See if your shop has Amarillo hops to substitute the Perle. Looks like a real nice Amber Ale. Keep it up!

  • @BrewingWithMikeK SNPA is actually a pretty deep amber color, Craig's color looks maybe a little bit dark to me but not really much.

  • excellent video, craig. as I write, I've got a 5G batch of a west coast pale ale (Sierra Nevada style) aging in the basement. I wanted to make a point to tell you that you were the reason I finally jumped into homebrew. My grandfather made beer and wine for years, and I even received a Mr. Beer kit at one point. But it was your videos that got me interested (obsessed) in the homebrew world. I'm dedicating my next batch to you, my friend. Prost and Cheers!

    When you last made that Muntons in the 80's did you:

    1.Control ferment temps

    2.Use quality yeast

    3.Use proper extra fermentables (DME, not dextrose).

    4.Follow good sanitation procedures.

    If not, then is it fair to judge a product because YOU did not put in the effort to make it decent?

  • @PeiHomeBrewer -- I say it's no dice for the nigerrr, it's a lose/lose proposition. If he says it comes out like feet it's a reflection on his brewing skills, if it comes out decent it's a win for the opposition. It's in his best interest not to even entertain the idea.

  • As a former student of Craigs (he had a major influence in getting me into homebrewing, thanks Craig :)), and now all-grain brewer, I've learned something over the last few months. Everyone has their own opinion on 1.the taste of beer 2. the quality of beer and 3. how to brew beer. My new philosophy is this: do whatever you want. Try this, try that. Make your own decisions. I still wish I could get my hands on a Dogbolters kit, but they went south. IMHO that was a kit worth brewing.

  • sounds like something i would enjoy.i guess you can say im somewhat of a hophead. down hear in the states theres a brewery called dogfish head. they make a 90 minute ipa which i really like,but i wouldnt suggest it to people that dont like hops. they continuosly add hops during the 90 minute boil.then they continuosly dry hop it during the month of fermentation. well,as always,i enjoyed the vid. keep up the good work craig,cheers!!!

  • @James1979100 I would check if they are fully carbonated. if you bottle carb. and it is to cold in the shed then the yeast will stop converting the sugar to co2 and alc.

  • Ok just say it, its too many hops. Sierra Nevada Pale Ale isnt a session beer. Its for beer snobs who pretned they love it because it cost alot but most of them dont. Trust me I tried to be one of them but at the end of the day I just couldnt buy into the snobbery nonsense. Thats not to say some people dont generally love those beers, but not me. You can keep ur double imperial ipa double chocolate rasperberry stout thats 12 buks a bottle. No thanks.craig and charlie p rule!

  • No boils kits are awesome and they are absolutely customizable. You can add many various sugars including honey, dextrose, brown sugar, molasses, maple syrup, sorghum syrup, corn syrup, along with any fruit, spice, or herb you can imagine to customize your brew. The best thing is that you are assured of a solid base.

    The choice is yours....hours of all grain brewing or 30 minutes of extract no boil brewing. To me, time is money.

  • Two points to made here. Firstly, you did get "in a crunch" initially. Remember?? You banned me which was was an emotional trauma. Secondly, I bet if you were to ask Papazian about his reference to extract, he'd mention he's referring to malt extract with a full wort boil, not a Cooper's Kit with NO BOIL and one kilo of dextrose. That's a big thing, which of course you failed to mention. I have never said anything derogatory about extract, EVER. It's been the no boil kits, which are crap.

  • @nige4958 continues.... I really think you should reevaluate your position on the Cooper's kits. They are bottom of the barrel. Funny, in this video you didn't mention anything about the difference between the SNPAC and a Cooper's kit. Do you think they taste the same? A beginner should go straight to what you just brewed until they become comfortable with the process, then move on to all grain, if that's what they wish. For me, extract is just too expensive. I pay $35 for a 55lb.of 2-row.

If it wasn't for your chum TSA and I, I think you'd still be with the kit and kilo. One day you may even wonder why the hell you even bothered with the tin.

It's called positive reinforcement and encouragement. You and TSA apparently don't posses those skills. Here I am trying to bridge the gap between kits and all grain, and you guys still try to rain on the parade. Looks pretty bad on your "arts" campaign.   • @CraigTube Gotta disagree mildly w you here. Nige did offer praise on your partial extract Scottish. He is clear that he hates the pre-hopped no-boil kits. He turned me on to some wonderful Maris Otter extract from Williams homebrew. I don't hate Cooper's no-boil, but IMHO they are inferior (decent beer, but inferior). TSA, OTOH, is a waste of oxygen and should be institutionalized. Your videos encourage, TSA's discourage. Good job un-banning Nige.

  • @nige4958 Please Nige, make just one Coopers kit before you continue calling it crap. Papazian indeed uses a Coopers kit in his favorite recipes section. In my Super Coopers Review video, I tasted 3 Coopers bottled beers immediately followed by a Coopers English Bitter full kit beer and the malt, body, hopping was all there, exactly as it should be. Finally, Craig's doing grains now because, one, a friend sent him some, two, his brew shop finally got some. Chill, lighten up man.

  • @nige4958 You've tasted a Coopers kit,so that means you did not make it yourself? In that case, do you know what the person put in it? Did they verify that their Coopers kit was not outdated or stored at too hot of a temperature? Did you examine their process? Did you know the age of the beer? Do you know if they properly controlled their fermentation temperatures? Do you like "Pride of Ringwood" hops? IMHO, if you tasted "crap" the problem was one of the above.

I've been part of many clubs and drank a great deal of homebrew from kits, patials, etc, etc. Do you really think someone who buys a Cooper's Kit is going to control the fermentation temperature?? Like you have mentioned, I'm not interested in the variables. From experience, it is nowhere near what I can produce in four hours, so you'll have to excuse me for my complete lack of interest. Question: Do you like Swanson's Hungry Man?

  • @nige4958 If you are as experienced of a brewer as you say you are, then you well know that any beer made without process control, e.g. good sanitation, fermentation control, etc., will be poor. Furthermore, all grain brewing takes longer than 4 hours, even using the simplest brew in the bag technique that I have recently demonstrated. Finally, your condescension is rude and unwarranted, I have endured it as long as I am going to, FYI.
