The phoenix theme is because of the resurrection like a phoenix.

But she doesn't die and then resurrects. No, she resurrects because she CAN'T die. There's quite a bit of difference.

She's not allowed to die because she drank the elixir of immortality. This is the nature of Fujiwara no Mokou.

Of course, people also don't die in spell card fights... it's the whole point of them.

Maybe the immortaility manifests depending on the user. Mokou's immortaility being a pheonix-like one.
