The composer is Eric Gorfain. His website confirms that he composed the song for Gilmore Girls. Unfortunately on his site there is no information for how to obtain the song itself. However, an amazing musician friend of mine said that most DJ's/music producers can extract the audio of this particular scene if you give them the DVD and tell them the details(season 5, episode 13, and where exactly time wise the music starts and ends).
I don't know what the song is - most people seem to think that it's Bach, Air Suite 3, but I read a music teacher's opinion that this is not the case. If you find out, please message me!
