I noticed that the spot you are going to mount your FPV camera looks like it'll be positioning the camera parallel to the wing. I think at that angel your likely to only see a little bit of the horizon and mostly sky. So you might want to look into mounting it in such a way so its angled down a bit. Well, good luck!
For better landings in the wind pick a spot well away for up wind obstructions such as cars buildings and trees. You wand the air to be as smooth as possible. Obstructions up wind of your landing zone will create turbulence witch could slam the plane into the ground. But with anything it just takes practice. Fly in the wind as much as you can!
Looks like the instability in those wind gusts is mainly from the low wing loading. An autopilot/stabilizer like the FY31AP would be nice but if you're going to eventually go with the ardupilot you shouldn't waste your money since the ardupilot does stabilization and so much more.
Awesome! I use strapping tape across the length of the wing to strengthen the wing and reduce the bowing! I actually tried to fly today with wind gust over 20, almost lost my plane! Guess its just best not to fly in high winds! LoL. Keep up the great work!

i use gyro on the rudder, but gyro on the elevator will also help.

use low throws in the wind cause the control surfaces to be more sensitive and use that rudder in landing
Also when you land try to make it just stand still and carfully set it dowm thas what I do

@KBERockets I know, I know... light blue is not the best for visibility!
FPV weight will be no problem, I don't think the GoPro will be bad either. I may make an even larger wing to help out...
