This implies (obviously) that wounds received while cursed affect the body after the curse is lifted. In which case, why didn't Jack instantly keel over and die from the gut wound he got earlier?

Barbossa is fighting because he believes Jack is mortal and wants to kill him for this betrayal (however inconsequential it may be to Barbossa). They keep fighting...because they love to fight. Sometimes I wish they'd have made Hector Barbossa the new protagonist in the end of Dead Man's Chest. He was way cooler than Jack. But every character I like seems to get killed. Jack, Will, Hector, Edward, Pintel, Ragetti... do I really have to believe that the only person to survive the whole series is GIBBS?!

I always felt somewhat sorry for Barbossa in the first movie, definately a great villain. I'm also glad that he got brought back later on, though. Davy Jones is definately close to his level, though I always felt Davy Jones lacked development in the sequels, especially in the third one.
Lord Cutler Beckett and Blackbeard both watched this video and realized that they could never be as epic a villain as Barbossa, and became so upset they both hit the dislike button.

I always felt somewhat sorry for Barbossa in the first movie, definately a great villain. I'm also glad that he got brought back later on, though. Davy Jones is definately close to his level, though I always felt Davy Jones lacked development in the sequels, especially in the third one.
