I tried something similar only using a snowboard under a homemade wooden platform. I even used the toe straps from my bindings, but found that breaking the static friction of the snow was difficult and once going could only go down wind. I also think you need very cold, dry, packed snow.
now i have an ice windsurfer and a snow windsurfer that i have made
soon it will be time to run the ice version since there is NO snow in Montreal

You need a bigger sail and a longer board. A snowboard is too short.
