I did the carrots and they were soft but didn't break apart. And I cook them for 3hrs and they were still in pieces, and I want them to be watery like yours. What am i doing wrong?

if you have a big pinch of Garam Masala lying around, throw it in the pan with the first few ingredients and yum yum, add some chili to make it even more yum yum.

By the way people, this exact recipe can be made into parsnip soup. very classic.

and yes > you're really gonna want to blend these kind of soups .

whatever you do though add plenty of seasoning / herbs (no meat please..) and make it more interesting than this one! =)

Nice recipe, thanks for posting! I think a lot of people underestimate carrot soup - it is incredibly healthy and can be really delicious if you season it properly. A note here. Mix the veg stock in the boiling water FIRST before you add to the mix. The stock cubes sometimes dont break up or distribute properly and you dont want a mouthful of that with your soup! It does happen.

This is an incredibly healthy recipe. Lots of vitamins such as beta-carotine that are really good for you. Enjoy everyone

what you can also do is, on a charcoal grill, seare the carrotts lightly, put the ingredients in the pot without the cover on, and leave the pot on the grill with the grill cover shut for 3 and a hald hours so the liquid and carrotts are smoked, then mash them and put it directly on the coals for 15 minutes stirring constantly. You might want to add a bit more oil too.
