  • @JevonGotSkillz ok, I found out what chadon beni is and since I don't have that around here, I'll use cilantro. That website IS great! I'll try it and I can't wait. It does really remind me of sofrito (which I use frequently in spanish dishes). God bless!

  • This looks very good but I saw in your video that you said the recipe for the green seasoning that is like puerto rican sofrito is on your blog and I couldn't find it. How do you make that? I'm going to use this recipe with beef tonight. I'm a trini (my dad's from Port of Spain) and I'm looking for recipes for West Indian foods that I remember eating as a kid. I'm making peas and rice tomorrow for my daughter and instead of stewed chicken, I have beef. I think it'll be good! Thanks!

  • @MichelleDonnatien sorry I just saw this. I will post a green seasoning recipe from a great site that I recommend yo check out as well. "simplytrinicooking" is a great site with plenty of trini recipes and as for green seasoning, there are so many recipes out there but that is a good one to check out.

  • @JevonGotSkillz thanks so much for sending this. It's ok if you just saw the post, we went to my mom's house and had peas and rice with stewed chicken! LOL So I'm gonna marinade the beef tonight and cook it tomorrow for after church. Thanks for the info. I'm looking around simplytrinicooking and I'll find the different recipes. What's funny is that I found this website last night looking for the ingredients in mauby. Thanks for the info!

  • u can use any seasoning from sazon to adobo but there is nothing like freash seasoning scallion garlic peper sife banduna < lol all blend togeter with water but im Americanized now so i use sazon and adobo, and u have to use a good amount of sugar depending how much meat your cooking u let the sugar bubble and smoke till it looks like its really burning not black though then throw ur meat in asap and start stirring so it wont stick lower ur heat n cover, for thhose who is int islander lol

  • @MIIZIIMAMII a mixture of blended herbs with the addition of water and/or white vinegar. Basically a seasoning component.

  • Thank you for actually showing how to make the brown sauce(for lack of a better word). I'm an African American, but I loooooooooooove caribbean food. I find it so much more exciting and delicious than american food. And since I love the food I love learning how to cook it. Other video tutorials don't show how to make the sauce from scratch

  • @vanessacharnee you're welcome and that is what I was shooting for because it is a process that unless you know someone near you to show you, it isn't easily understood. Glad to hear it helped =)

  • On a stove with a dial what # do you caramelize the sugar --- 7, 8, 9 or hi/10? Seemed like when u poured in the chicken there was brown sauce already.. What makes the marinade black and how do u know if its too much liquid... Think i had too much bc meat didnt brown but it was good anyways lol

  • @bahdbwoyz I was taught to start on high heat, the highest setting actually and when u add the chicken to the sugar let it cook for a few minutes on high heat and then turn it down to medium and let cook from there covered. As far as the marinade, depends on what u add, some people add soy sauce, some add worcestershire sauce and even oyster sauce...but that is alongside ketchup or fresh tomatoes, onions, etc... and when I add the liquid I usually pour in enough to come leveled with the chicken

  • Thanks Jevon! My stepmother used to make a version of this that was very dark in color, rich in taste... similar to the flavor or jamaican oxtail. Any idea how I can modify the recipe to obtain a similar version?

  • @c13gladden brown sugar maybe? I used white in this video. or maybe she uses a dark soy sauce or worcestershire sauce

  • @mariagazis search green seasoning in my video list, that's the main thing that doesn't change from cook to cook. Other than that, you basically add what you prefer. my mom showed me a shortcut if you do not have tomatoes on hand, just use ketchup. I also add some soy sauce and worcestershire sauce if I feel for it. This dish lends itself to creativity. If all else fails, check the description.

  • Not sure I follow you because I have tomato in the version I demonstrated here. The recipe I provided on the right is from a very popular trinidadian cookbook. Gotta keep some things in the family :)

  • Also, some people use ketchup/catsup in place of raw tomato when in a pinch. I've had it both ways, it's all on personal preference.

  • @JevonGotSkillz Yeah we put ketchup in our stew. So funny how we all pretty much do the same things with 1 or 2 different things.

  • Nice job! I'm a Trini in Atlanta that's still trying to recreate his grandmother's recipe. I think the chicken back then (backyard fowl, actually) was very different. For my taste, I would drop the oregano (too Italian!). I like the basic, thyme, rosemary, and SAGE (adds a fantastic flavor!), along with the usual garlic, black pepper, etc. Tip to your brother Earl (I can definitely relate): add the meat one piece at a time, and first remove excess moisture (use paper towel placed on plate).

  • No doubt! All great tips indeed and I shall pass them along. As far as the oregano, that's from the naparima cookbook. I didn't post the "exact" recipe my mom taught me :) BUT one thing I saw that you mentioned was SAGE! Man, I haven't tried it with sage but best believe I will be trying it cuz I LOVE sage!!! Good lookin on that.

  • I tried this recipe a couple days ago and my family loved it. Keep posting please. After I carmalized the sugar I added my chicken and the carmel crystalized a bit, but after stiring it melted, is that ok? Of course the color was not as dark as yours ( about one shade lighter), I probably didn't carmelize long enough, but it was still good :)

  • Thanks for posting. A friend told me if the sugar is burnt you can toss in a boiled egg with the shell intact to remove the taste of burnt sugar. Is this true or is it a myth?
