in this clip, i used a sound from a VL70m. it's an old synth build by yamaha using "physical modeling" technology which accurately simulates the complex vibrations, resonances, reflections and other acoustic phenomena that occur in a real wind or string instrument.
For the recorder , i've done the same observation : i play sax since i'm ten years old, but that's my recorder-playing memories which make the job !!( same sensation, same breath controller).
at first, i transpose my sax abilities on EWI , but now i begin the "EWIsation": specific approach for a specific instrument ...
i like your approach too!! that's the magic side of the EWI: the Macro diversity (MacD) which determines the flexibility of an instrument to be played in different contexts, music styles or assuming varied roles. With a high Mac D you can use an instrument in a large variety of context, with a low MacD its more specialized. EWI have a high Mac-D, because its a midi controller with unlimited patch, and high technical potential.

The balance: its define the relation between the frustration (if the instrument is to much hard to play), the boredom ( ex: whistle and Kazoo are limited..) and technical challenge : EWI is a very good challenger for this parameter!! So octave rollers could be difficult at the beginning, but with substantial work, the EWI give good perspective of musical practicing.
Playability, progression and learning capacity: you can compare the EWI to classical instrument (acoustic). The potential technical is awesome (look at Michael Brecker!!) and virtuosity isnt a utopia. Its a important difference between WX and EWI , because, for the EWI the keys arent mechanic, so it permit more virtuosity, and the fingering are unlimited (if you dont use Boem fingering ) .
Learning curve: its a kind of graphical representation of the time needed to acquire minimal abilities to feel satisfaction and benefice of his work (its very subjective, but imagine what you feel if you begin violin tomorrow...). This curve can evaluate to reach the mastering point. To compare to others instruments: the learning curve of the Kazoo is very limited, for violin its very slow, for piano you have no problem with sound but the technical is harder .EWI have a very good profile
Efficiency = ( musical output complexity X performer freedom ) / control input complexity . You can play a complex music, with a good freedom (for expression) and without a lot of constraint (you dont need to be engineer or computer scientist to play)
EWI is a real efficiency instrument, is own technical conception allow a large freedom , and complex musical production .

Yes, those octave rollers require plenty of practice but otherwise I found that the EWI "slotted in" nicely and is extremely easy to play expressively.
I'm sure that my recorder-playing memories helped along the way but the fingering was almost instinctive. For quite a long time, I'd been limited to either a keyboard or a didgeridoo so adding the EWI to my collection really opened the gates to a new realm of expression.
I've recently added a VL70m and I think there's some irony in playing an instrument which cannot be overblown and then adding an external unit which can simulate the intrument being overblown. ;)
The EWI has replaced my favourite didge as my "companion instrument" or "my second voice".
It's a good thing that my wife isn't the jealous type... I might wake up one morning to find my EWI has been the victim of "an unfortunate accident"... ;)
And... Strangely, the EWI's even given me the desire to try a sax or a clarinet one day...

yes : you have a midi output..but you need to change some parameters ( affecting breath control (CC2) for a best reactivity).
