Because a large amount of the gasses are allowed to escape from the rear of the weapons, greatly reducing its recoil. Some can actually be shoulder fired but most have too much recoil and require a tripod or mount.

It is considered recoiless because an individual soldier can fire heavy artillery shells. Shells like that are normally used only in vehicle mounted guns. They are similar to an RPG and can fill the same role. It is physics because there is force exerted on the barrel there will be some kick, but since much of the gasses are released out the back 90% of the recoil is dissipated. Thus it is called a recoiless rifle.
