The fungus looks like the symbiotic mycorrhizae that help plants absorb nutrients better. Maybe the beans were weakened for some reason and the fungus took over. I'd love to see a time lapse of the fungus' growth in detail :-)
@Clive2gee22 The person making the video seems to have placed the beans in a shallow ceramic bowl without any holes for drainage. Thus, when the person watered the beans, excess water had nowhere to go, making the soil overly moist, which can lead to fungus and mold growth.
Beyond that, these look like regular run-of-the-mill beans you'd buy in a supermarket. It stands to reason that because they're meant to be eaten and not planted they may not have been viable seeds any longer
