Scoring is when you make a mark with a tool ( I prefered using a bone folder / scoring tool) to break the fibers up in the cardstock so you can fold the card stock easily & without any extra creases. Gives your project a more professional look

An alternative to the dimensional (attaching the message to the plastic) would be a glue dot.
It will probably stick better, and will cover the candy up a little better. Besides, you don't really need it to pop off of the wrapper.
