Wow, that's so amazing how they really seem to form out of nothing right there in the middle of the sky.

Interestingly, clouds DO form in middle of the sky for no apparent reason. However, there's always a reason - mostly that the air acts a lot like water in a stream... there are currents, eddies, and ripples at all different altitudes. As invisible, humid air moves up into cooler air it can suddenly condense into visible clouds, and then just as suddenly evaporate and disappear as it decends back down. There's lots going on up there that we just can't see without clouds! :-)
