  • Hahah I think it's funny he took 2 minutes to dice half an onion. I know it's for instructional purposes and everything, but still. It takes like 10 or 20 seconds

  • yeah ok! whatever you said! Like cutting an onion is a science??? Same results, trust me! You are way off with the pushing/pulling. Has nothing to do with it! I come from Montreal,Capital of the steak tartare! Everyone knows a fine dice is necessary and never use horizontal cuts and my dice is perfect. Actually,horizontal cuts make for a less steady cutting medium and exposes you further to cuts. The trick is to make the first cuts concentric and as close as possible

  • WRONG! You're not pulling the blade "toward your hand" because the blade is parallel to your hand and the cutting board. I would recommend a very sharp knife, because the most dangerous knife in the kitchen of course is a dull knife. If you are a beginner I would agree with you, (keep it simple). I've been a professional cook for 25 years so I can tell you if you want a quick finer diced onion there's absolutely nothing wrong with this technique. Just know what you're doing or you will get cut!

  • Every chef uses horizontal cuts for finely diced onion, you don't know what your talking about.

  • The horizontal cut is necessary fro uniform pieces. It is layered, true, but it is also natrually round. So when the onion is in half on the talbe, from the top of the round where it comes down on the side to the table, You'll get big verticle pieces becuaze you are then starting to cut Parallel with the layers. Yes, normally you want to use a pushing motion but it is the FREE hand you don't want to bring the knife towards. You're gonna have to use a pulling motion for the first cuts here.

  • then turn 90 degrees and repeat.If you can do that perfectly forget the horizontal cuts. You can waste your time on them or better yet, improve your knife skills. It's totally up to you!!!

  • Hahaha..You would never make it at CIA in Hypde parke buddy, the WORLDS GREATEST culinary school. They take random peices from time to time and match them to your other pieces. BTW, 1996 High Pass gradutate here. Don't need to work on my knife skills.
