Well, it's the wong fei hung (or huang fei hong) theme. It's performed by Jackie Chan himself ! It's not too hard to find ;)

Well most of his HK movies are good, except a few ones. The Shaolin Temple is excellent. My favorite one remains Once Upon a Time in China.
