From what I know, our bodies are more evolved to process heme iron from shellfish, red meat, poultry, and fish, absorbing above 15%+ of the heme iron content for hemoglobin synthesis. Whereas the non heme iron found in plant foods always tends to be below 7% absorption. This is also why vegetarians and vegans are said to be at higher risk of developing anemia.
I make this every week. round about 4 cups of it cooked so about 8 cups a week raw. It has improved my health so much that I swear by it. Favorite thing to do with it is steam it with some hot pepper flakes and a ton of garlic. for ever 4 cups of raw kale I use about 3 cloves of garlic. they compliment eachother very well.

The calcium part is silly. The oxalic acid in it inhibits most of that calcium so it's not a viable source at all. Juicing does nothing, cooking removes some of the oxalic acid but all in all it's not a viable source. I agree with the vitamins though. Kale is the one vegetable I'll buy organic for the awesome beta carotene, vitamin c and vitamin k content.

i mean, you can't just have kale as your diet, if your worried about getting goiter, make sure to eat foods high in iodine OR the problem with people that get them is from a genetic autoimmune problem where your body response to low thyroid hormones releases TSH which increases cell division and causes the thyroid to grow, hopes that gets you started somewhere

she chopps the whole kale finely and grills it in a hot pan with lots of olive oil and garlic. Its so crunchy and delicious served over beans or just eaten plain, mmmmmmmmm.

Heated the olive oil, pressed some garlic, Added enough water for light steaming.
Volume of kale went down by at least half. Good thing started with huge amt.
Wow. It was really really good. Thanks again. Also added a drop of light almond oil and that was lovely, too.
