  • Saying kale is "absolutely delicious" is going a little too far. Kale can taste good if prepared right, but "absolutely delicious" kale is not.

    KALE IS NOT DELICIOUS! KALE TASTES HORRID!

    Sushi, smoked turkey, pizza, BBQ ribs, steamed crab, and chocolate are delicious. Kale is not.

    It is absurd to suggest otherwise.

    Now, that does not mean you should not eat it.

  • A friend introduced me to raw kale salad and it's very addictive. All it needs is a little lemon and olive oil and I add dried cranberries and whatever nuts I have on hand. It is also very economical and stores well.

  • Funny, kale has been part of the Dutch kitchen since well, forever. It's mainly eaten as a stew, so mashed together with potatoes. Google 'boerenkool met worst' for an idea what that looks like :)

  • I don't like wasting food, not if I can help it. I will do as she says and chop the stems and cook it in advance :P

  • this is one of the things i eat this all the time when i feel drained and weak, i drink a glass of orange juice or eat some fruit 30 min before i eat the kale to get the most out of the iron in the plant.

    *fun fact the iron in plants is absorbed more easily then that in animal protein the vitamen c increse the amount absorbed to boot

  • @Missmadammozart where did you read this, im interested. From what I know, our bodies are more evolved to process heme iron from shellfish, red meat, poultry, and fish, absorbing above 15%+ of the heme iron content for hemoglobin synthesis. Whereas the non heme iron found in plant foods always tends to be below 7% absorption. This is also why vegetarians and vegans are said to be at higher risk of developing anemia.

  • I make this every week. round about 4 cups of it cooked so about 8 cups a week raw. It has improved my health so much that I swear by it. Favorite thing to do with it is steam it with some hot pepper flakes and a ton of garlic. for ever 4 cups of raw kale I use about 3 cloves of garlic. they compliment eachother very well.

    Heated the olive oil, pressed some garlic, Added enough water for light steaming.

    Volume of kale went down by at least half. Good thing started with huge amt.

    Wow. It was really really good. Thanks again. Also added a drop of light almond oil and that was lovely, too.

    If you guys ever tasted it, then you will know it just tastes like broccoli, but a bit stronger.

  • @KAILequalsSEX : Not everyone is a Navy S.E.A.L. like you, most people find raw kale offensive to the palate to say the least, I eat my kale raw for health benefits, it does not taste like broccoli, it actually tastes like shit, but, like I said, I eat it for health reasons, not because it tastes "delicious" like Spies said, that was a mouthful. I think the sole of my shoe with some salt and pepper would taste a little better. I always thought collards were gross, until I had kale.

  • The calcium part is silly. The oxalic acid in it inhibits most of that calcium so it's not a viable source at all. Juicing does nothing, cooking removes some of the oxalic acid but all in all it's not a viable source. I agree with the vitamins though. Kale is the one vegetable I'll buy organic for the awesome beta carotene, vitamin c and vitamin k content.

  • This is super informative, and you have an excellent vid personality. If you aren't already, you should be doing this for a living...

    I cruised in here with a bundle of wilty kale bought on sale and urged by Alton Brown to try the various forms of cabbage. Didn't have a clue how to fix it. You helped me! I am still cooking right now but it smells kind of lovely!

  • Kale an cabbage are probably less popular than spinach and the like as they are considered peasant food. Also people who are mostly eat processed foods with tons of sugar fat and salt aren't used to the taste.

    My favorite way to cook it is to saute it with garlic a little butter or oil and lemon juice.

    Raw kale is not that edible in my opinion. It's tough and bitter and hard to digest.

  • i mean, you can't just have kale as your diet, if your worried about getting goiter, make sure to eat foods high in iodine OR the problem with people that get them is from a genetic autoimmune problem where your body response to low thyroid hormones releases TSH which increases cell division and causes the thyroid to grow, hopes that gets you started somewhere

    she chopps the whole kale finely and grills it in a hot pan with lots of olive oil and garlic. Its so crunchy and delicious served over beans or just eaten plain, mmmmmmmmm.
