He use less Green Curry Paste than it should be. The color of the curry must be light green and thick. The others are fine. Lime juice is optional, you may not need it.
The taste should be sweet and then salty, some spicy and not sour at all.
The palm sugar make the dish different from the white sugar so much and also the fish sauce from the soy sauce. I hope this will help ^_^
its not authenticity! but hey they r not thai! but i am :) try to buy green curry paste from asian grocery (Nam Jai) brand theres a lot in australia. use good coconut milk fish sauce and palm sugar thats all u need. oh and do not put too much water u will ruin everything! good luck
Not sure on the authenticity of this dish but when I made it today it is VERY similar to the Thai Green Chicken curry I get from my local Thai resturant which is very good and operated by a family from Thailand. I did however let it thicken a bit more than what was shown in the video.

idont know how he call that green curry its so easy to make just get chicken breast cut in pieces but some oil in apan add one bsp of green curry fry for three min add the fresh chicken fry for abot 3 min then add 1can coconut milk but but the can in the fridge for about 1 hour before using use only 1bsp fish sauce not more than that and add some red and green hot chille let it simmer for 3min then add fresh baisel and fresh coriader done

personally i like to do it like its done in the video above, but at the end of the day the difference in taste is very small. you'd have to be from thailand to know the difference.

That's way too much paste. I'd use 1 tbsp, no more than 2 tbsp for that many servings.
You certainly don't need to add more spice to the green curry, it's the hottest one. This guy is playing a prank.
If you're new to curry try the yellow, it's not spicy but same flavor.
I personally omit the fish sauce as it overpowers the other flavors.
If you like a thicker sauce combine 1 tbsp corn starch 1/2 cup of water in a cup and add a little until it's thick enough. Bring to boil.
