  • As to this vid, love it. Also, your Swiss meringue buttercream is the absolute best, pretty much impossible to mess up and so silky.

  • Supertruth77 It's possibly because a REALLY good cupcake is harder to perfect than a normal cake. 2 minutes either way and it's ruined, over beat them for a fraction and the protein in the flour goes hard an ruins the cupcake.

  • My sister is a baker specialising in wedding cakes, who finds the current trend for cupcakes “nauseating and childish”. Still, her job often obliges her to make them for clients.

    As a form of ‘sabotage’ she secretly adds ingredients odourless to humans but irresistible to rodents. Anyone bringing these products into their house probably has an infestation within a couple of weeks.

    Personally I find this a little distasteful, but she’s convinced she’s “improving society’s taste by stealth”.

  • These are very easy to make, and the icing is to die for.. Many friends say that it tastes better than going to a professional cupcake store (which are popping up everywhere!!!) These are so beautiful and easy to make... I have made these now 3 times, and the first time was 100 cupcakes for an anniversary party!!! Great details in the instructions!!

  • I made these cupcakes for a friends bridal shower a year ago and everyone loved them! I even had people ask me to make cupcake bouquets for their special occasions! This was my first time attempting anything in buttercream. A year later I took a Wilton cake decorating class and let me tell you - I learned more from youtube videos than I did in the four-week class. Thanks!

  • Will the icing hold up for a day without losing its shape? I have to make 100 plus for my daughters wedding. i will need to decorate the day before. Please advise me as to what I need to do for the icing to keep decor and also does it need to be refrigerated? Thanks you so much!!!!

  • @CindyLian0203 104 should be okay... thats like the middle size. you have a 102 tip that is the smallest rose tip and then you have a 125 rose tip which is the largest, 104 is perfect!

  • I just made the real buttercream recipe on this video. The flavor is unmatched. Amazing. I have a question. Since one of the ingredients is milk or cream, should this stay refrigerated? Also mine isn't holding shape like yours is with the flowers(but I am in Florida with extreme humidity). Perhaps I should reduce the milk to keep it thicker - or leave it out altogether? Any help is appreciated.

  • @puzzlemaker77 why dont you try adding more sugar to it to stiffin the icing?

  • @puzzlemaker77 I think ur best bet is to substitute half of the butter for crisco. (Or, you can do what I do, and use all crisco :) )I live in SC so our humidity will not allow for a pure "butter" cream recipe. Also, you don't have to refigerate the icing because you use milk/cream, however, you can substitute that with water. (I've never noticed a difference in taste/texture/ect...)

  • @5785rogers Confectioners Sugar also goes by the names icing sugar or powdered sugar. It is not the regular granulated sugar.

    As for the cupcakes, most yellow cake recipes can be baked as cupcakes, just reduce the baking time to around 20-25 min.

  • what you did rong is u used a yello butter and u have to do this very slowly and not in a hurry it take alotof pratic but u will get it i know i make thing like this all the time and only 13

  • I tried to make this buttercream but it got too buttery and ended with an yellow like collor...

    idk, maybe i did something wrong...

  • @leal088 it might be possible that you need to whip/cream the butter longer, making it lighter and the color should brighten up a bit aswell. Make sure your butter is soft before you begin. Also use unsalted butter.

  • Wow, her butter cream texture seems perfect! I'm totally going to favorite this video so I can start using that recipe instead of Wilton's. It's good, but it's always lacking on the texture...I've always gotta doctor it so much, which ends up leaving me wondering whether it's just right or not.

  • Hi, I'm not american could someone please tell me how much a stick of butter weighs and also how much is a cup of confectioners sugar?

  • Any basic buttercream recipe will work, I use 4oz of Butter, and 12oz of icing/confections sugar, And perhaps, if ithe buttercream is too stiff, a teaspoon or two of milk

  • @cornishorchid in case you still need to know. A stick of butter is .25 of a pound and a cup is 8oz by volume, not weight.
