i'm not sure, but i have a hunch that the chicken he added wasn't raw at all...I think he just edited out the part where he cooked the rest of the chicken for time or something...I'm not an expert but i don't think it's very safe (hygienically speaking) to add raw meat to a fully cooked dish...but I don't know... sorry, that was my little blurb :D

Have you ever tried the ginger that comes in a tube? I know it sounds strange, but after many times of having the checkout clerk toss away my ginger because they thought it was trash on the checkout line, I tried it and it is great.
