Nice job. I still have my Photon system. It was one of the original Phitec models. I had the hyperspeed cartridge on an L6S with all high B strings. Tracked pretty good when set up properly. I also had the regular version on a Strat but found it a bit more persnickity. I have the Roland GI-20 system that I use now. But I'd like to get the Photon happening again. If nothing else I'd like to use the pickup for individual outs or to drive the Roland. Do you if this could be done. Cheers.
Did I respond to this? Yes you can get individual outputs by tapping into the internal circuitry. I did a fair amount of reverse engineering on the controller box and know what signal is where along the signal path. I'd be happy to help you if you want to try. As far as connecting to a Roland, it can be done but there are differences. Check out the MIDIGuitar Yahoo group.
It's not easy. I have found that a lot of basic guitar-playing mechanics translate over but the music is very different. Developing the bending or "meend" technique is very challenging and I have a long way to go there, but that's what makes the sitar such a wonderful instrument so I keep plugging away.

I also use a Variax and I'm looking for a way to play into a music notation program via midi WITHOUT spending a fortune.
Does the optical pickup come withe the Photon unit?
Any advice? I was looking at the Sonuus no pickup convertor (mono is ok) but it won't accept Variax input.
