I was wondering if you could pass on your receipe for the frosting. I have a son getting married and would love to try this. His great grandmother who is 101 and counting is 100% Norwegian and I would love to make this to honor her since she will be unable to attend.
@oldebteacher My wife said the frosting is a cake-type frosting. You could flavor it with vanilla or almond. She couldn't find the recipe she uses but any cake-type frosting will do. The traditional Norwegian cake has the rings, frosting between the rings to act as glue, and the loops that go up and down on the side of the cake. The loops that were made separately and stick out were a creative touch by my wife and aren't traditional. Many Norwegian cakes have small Norwegian flags sticking out.
Kransekake Cream together 2 cup (1 lb.) soft butter 1 cup almond paste 2 cup sifted powdered sugar 2 tsp almond extract Beat 4 eggs into mixture. Sift 5 cups flour & add to mixture, mixing until very smooth. Place paper patterns on lightly greased cookie sheets. Put dough into cookie press or pastry bag ½ inch. Press out to shape rings around inside edges of paper patterns. Begin with smallest ring. Chill for 15 minutes. Bake 350° for 15 minutes or until delicately brown.
Grind almonds a portion at a time, in electric blender. Combine with remaining ingredients and work to a stiff paste. Store in airtight container or disposable plastic bag.

As an aside, this cake can be served with vanilla ice cream. It's one of my favourtites, apart from sukkerkringler. Yeah... I'm weak when it comes to those....
This cake is used in all celebrations. When serving the cake you split the cake between the rings. You may want to save the top for later. You put a knife between the rings and break them apart. The rings will be split into sticks and eating cake like biscuits. For Christmas baking is often sticks of the same type of cake, but decorate them with chocolate instead.
@honeyzway I'm not sure how the Norwegians serve it, but in our case the cake was mostly for decoration and for an acknowledgment of the Norwegian ancestry of the groom. They had a regular wedding cake that was used for the traditional cutting by the bride and groom and was then served to the guests. Towards the end of the reception, my wife broke the rings of the Norwegian cake into pieces, and I walked around and passed the pieces out to the guests.
it's not a wedding cake! it's a new years cake :)

(1 box = 4 cups, sifted or 3 1/2 cups unsifted)

How to decorate: Put many small Norwegian flags on the cake!(And some fancy thingy that says boom and out comes a paper with a very dry joke)
And we serve with like..put it on a table and everybody just brakes it with their hands and eat it...And drinking norwegian Aquavit

I never saw a kransekaker like this. Usually, its just almond paste and sugar - it becomes a cookie, not a cake.

Instead of using the paper rings, my wife uses metal forms that were made for this purpose. She didn't spray the metal forms with Pam or anything.

Making ring patterns:
