Nice work. I try to use "glacial" water when possible, "drinking water" is just filtered tap water, you get the same result from a brita filter on your tap. I tell people that it is okay to use tap water only if it is taste and odor free, which luckily mine is. Not all tap water is full of impurities. ( my Wife works at the local water district, so I have a good knowledge of whats in it). Water quality, cleanliness standards, all key. I'm suprised about the "off the shelf" honey tho'...
