u can eat the lotus seeds when it's harden up a bit. and the bitter piece inside the seed is used to make tea. our house is right on the river bank in vietnam, so i see them all the time. beautiful images you got there.

Lotus are very abundant in Asia. They eat the seeds of the lotus like a sunflower seeds.
