@PinkyBerry66 just roll the omelette up ;P if you have a maki-su (sushi mat) you can lay your end product on the mat and sort of just mold it to a rectangular or circle shape. (making sure that youre omelette's not overcooked so it can rest and set well in the mold!)

Love your videos! I've tried the Sugar variety of Tamagoyaki when I couldn't get any Mirin, it's close, but I think Mirin has a distinct flavor for Tamago. ^_^ Both very good! Another substitution, I heard, was to use brandy and sugar.

*Pop the air bubbles gently with your chopsticks - that way you can lift the egg sheet off the pan easier.
*Before cooking, heat the pan with high heat for a minute or so, then reduce the flame to the point where it doesn't come out from the bottom of the pan - you can't make nice and juicy tamagoyaki if the heat is too low :-)

One of my fav food ^o^. I usually make it for nigiri-sushi. Yummy. And btw, using spatula is much more easier for rolling the egg than using chopsticks :p

I call this sweet fried eggs. By th way I don't use dashi stock. Instead I use mirin..
By the way there are absolutely no square pans out here, and last time I wanted to order one from Japan they were out of stock XD

One of my fav food ^o^. I usually make it for nigiri-sushi. Yummy. And btw, using spatula is much more easier for rolling the egg than using chopsticks :p
