  • @MyREDTAIL That was just some cheapo pan left over from a froze pie. Actually you don't even need a pie pan, you can just do it on a cookie sheet and it works just fine.

    Yes I have used a spray bottle and that works very well too. I like the ice because you don't have the door open as long and the oven retains the heat better.

  • @jimzshowz Jim do you have to keep adding more ice cubs as you turn down the oven temp from the 500 deg,? Or you just have to put the ice cubes in at the beginning only.? & Let it just bake from there without the ice cubes.?

  • Thank you for posting this video. Bakin' and ukeleling - LOVED IT. Since seeing this video, I've baked the best plain loaves I've made since I started making bread coupla years ago. Monday, I baked two loaves and the steam worked both crusts just right, as you foretold. One difference: I use some celery salt. This salt is a good mixture with onions and pecans or walnuts, or with butter. Do you do croissants as simply?

  • Well I made your bread like I said I would. Exactly according to your directions. My Dog it was better than ANY bread than I have bought . For this type of loaf I would of had to pay about $5.00 for at a market. For sure when it's just warm you have to slather it with butter and scoff it down but when to stop????

  • I like the use you made of things found in everybody's kitchens (the cheap pie pan & the plastic bag from the supermarket); it makes this recipe seem more doable for would-be bakers who haven't bought all kinds of specialty equipment yet.

  • I made your easy bread today after letting it sit for about 20 hours and it was the easiest sour dough bread that I have ever had. Honestly I forgot all about the dough and when I finally remembered it had fermented and I had sour dough bread. Thanks for posting the video.

  • @JudyPorse Sure, you can just set it on an ordinary cookie sheet. The pie pan is just one idea. use your imagination. You can use all whole wheat or any ratio you like. Half whole wheat and half regular flour is very good.

  • Instant-rise or standard yeast?

  • @Doggieman1111 I usually use instant but the other will work fine too. the standard is made into larger particals and it is best to let the yeast sit in the water by itself for a few minutes just to disolve.

  • @utub006 The dough isn't too fussy. you can finish the bread any time the next day.

    Or if you get busy and can't get to it, just put it in the fridge and it will be good for a few days: it will just take a little longer to rise.

  • I've made this over and over and over and even gifted it - it's SOOOO GOOD! yes it takes some time - but i've thrown it together early morning and waited 6-8 hrs then continued the recipe! THANK YOU for making this video :o)

    Actually I do use less salt now than Idid when I make this video.

    Now I use 1 or 1 1/2 tsp of salt.

    Some people, like youself, are just more sensitive to salt, so feel free to adjust the recipe to suit your own taste. Good luck and keep baking.

    Try 1/4 tsp salt next time.

  • Thanks for posting this! I discovered your recipe last year and I've made it several times since, to rave reviews. I'm sure if I'd just seen this in a recipe book or online somewhere, I'd have dismissed it as too complicated and never made it. But seeing really is believing! No Hollywood magic here, just good bread! The whole "3-different temperatures" is not even that hard - you only have to pay attention to it for half an hour! I never successfully made homemade bread before. Success!

  • Well, good bread really does take time. At the very fastest, a bread machine takes just under 4 hours... And most of the time, the dough is just rising. If you put the dough together at night, once the kids are in bed, they can help you stretch it out in the morning and then they only have to wait 2 hours.

  • Nice vid, but please explain 'easy'! 2 days, 3 temps, ice, out-in-the oven, whoa!

    REAL EASY 75 min bread: 500g flour (whole grain/white in any ratio), 20g FRESH yeast or (not as good) 10g dried, appr. 300 ml 50°C water, 10g salt, 1 tsp sugar, dash olive oil. Mix in machine, slowly adding water until *just* still workable (get this right). Shape and put in greased tin. Rise for 30-35 min, pref. @40°C. Bake for 30 min in preheated 220°C oven. Remove from tin immediately. Cool on rack. Enjoy!

  • I think the point was to use one's hands. If the point was to use a machine, people would just use a machine and follow their instructions.

  • I think the point was EASY. As in, easybread, easybread, easy easy easybread. But if your inclination insists on difficulty, well then use your hands for kneading (that's the only use of my machine, in case you misread), and still gain a sea of time and easiness. BTW, 2 tsp salt in 3 cups of flour gives you a VERY salty bread. So the recipe actually sucks quite a bit.

  • Wow! It needs to much time. You can use a warm cloth covering the dough to speed up the fermentation.

  • The main trick here is to treat the first risen dough like a bomb....don't knead it, move it too much, protect those gas bubbles! In fact I just barely shaped it to fit in the pie pan(any 1 inch high pan will do), let it rise 2 hours and do the 3/10minute countdown temps......so good!

  • I've tried this a couple of times a week for a month and each time the bread turned out great. I've added herbs and other variations. Today I replaced a cup of the flour and a cup of the water with 2 cups of my sourdough starter and I have easy sourdough. Turned out great. Thanks Jim.

  • Making bread the water needs to be between 100 and 115 degrees F. If it feels just a little bit warmer than body temp it's right.
