not to be rude but try chopping one of those woodchips thats been soaked and see how much water has actually soaked into the wood.. I used to soak all my chips but have since gone the other way and actually burn them down completely before I put the salmon/chicken/pork on.. anyway sure looks tasty!
If you smoke a fish it'll make your head swim and give you a haddock. I write fish puns for the halibut. These puns are good for the sole. I never smoked a fish because I never pointed a gun at one.

hey John, thanks for the recipe. Some recipes suggest you brine the fish before smoking: what does this do / what purpose does this achieve? Also, do you have a recipe for hot smoked mackerel?

I'm curious, I do three to four week canoe trips up the coast of British Columbia and Alaska with only what I can carry in a 17' canoe. My problem is that I'm always trying to catch small salmon because, with no means to freeze what I dont eat, I dont want to be wasting massive hunks of salmon. Is there any method you can think of where I could smoke over a campfire with out having to take a huge bubble grill like the one you used?

weber grills are near indestructible, I've seen a 30 year old one that goes to the beach every 2 weekends, and aside from the rust on the legs, the rest is new
