Used your dip again! Still brilliant! One problem...I took it out of the fridge too early (maybe 30 minutes to 45 mins.) and it got very runny...still edible but not as thick. Not in the professional kitchens because the volume of fresh cracked pepper needed would not be produced by this home hand held model. We always used coffee mills to grind our peppercorns right before service. I love this one for my home kitchen because it allows me to grind the pepper with just one hand, leaving my free hand to turn the item I am seasoning.

You can, but the buttermilk gives it a creamier sort of consistency. In a pinch, however, you can try the milk. But it won't taste the same. Hope this helps!
I'm attending Buffalo University this year, and last weekend I went over there to survey the college. Tried one of the local restaurants there, and tried blue cheese sauce! Before I hated blue cheese, now I love it! I am going to try this recipee asap.
Wow. Sorry I missed this post. My email alert sometimes does not work. Sour cream is a cream that has lactic acid culture added to it to give it a tangy flavor. Buttermilk is milk that has bacteria added to it to give the milk a thick consistency. It also has a tangy flavor. Hope this helps. Thanks,

I use oregano, lemon juice and chopped pickles instead of the vinegar, worcesteshire sauce and salt. It tastes great with fish.
