I think every barbecue of mine I use a mustard base. Cherry and hickory are usually the woods I use along with spraying them with apple juice. I was always taught to never rub the rub and I marinate my meat.
@bmxbilda5 I would guess your smoking them for too long and getting way to much smoke. If you smoke them for too long they will get a strong bitter taste and you could almost say a metallic taste. Here is my suggestion. Use a charcoal base and two or three small chunks of wood. Only really smoke them for about an hour and if they get too dark wrap in foil and finish! Good luck.
@bmxbilda5 It's because you had too much white smoke which contains creosote and give meat that bitter taste. What you want is known as "TBS" or Thin Blue Smoke. Basically white smoke is created when the wood is not burning completely due to the fire not getting enough air and getting hot or from using green unseasoned wood. Make sure the wood is completely dry that you smoke with.

Thanks for the walk-through @tulsajeff . I have a similar smoker to yours for the spare ribs...do you rotate the ribs at all? The heat source on the left is something I struggle with also, so I find if I want the ribs even cooked I have to rotate the ribs at the half-way mark. Thoughts?

Hey Jeff. I enjoy your videos. Glad to see you stopped mixing the music in your audio tracks. It was a bit distracting in the other videos you produced. Adding music to your videos can be a good thing if you have the right tools, but the mix is tricky especially if you don't have a clean voice track to work with. Keep smoking.
@rkerlin m new at smoking ribs,i use pork back ribs, but every time i smoke them they come out hard and chewy,i remove the membrane, marinade them over night with dry rub, and i keep the temp between 200-250 for the whole 6 hours that i smoke the ribs, can u please give me advise on what to do different.
I haven't been on the forum in awhile but you and all the awesome people out there have been a great help. I bought your rub and your sauce a couple of years ago and they are a hit to this day... My wife and I change the sauce slightly.. she's not big on black pepper. But it is still amazing. It's one of the few Bar-B-Q sauce that doesn't give me heart burn. Again thank you for all your time and effort. I and I'm sure all the others Appreciate it.....

I bought your recipes about 3 years ago!! This summer I smoked about 300 lbs. of pork butts w/ your rub. Everyone says it's the best pulled pork they've ever had !!! My ribs are great w/ it on also !! Love your videos but you need more lights. Keep up the GREAT work!!!

the first lot did anyways,
the second lot wich i used a secret sauce for,
smell nice tasted like a sour metal taste when hot now im letting them air for a week,

take your knife start at tip and cut towards the meat... score the bone.. stab inbetween the bone sand peel back.. jus tlike prepping a rack o flamb

I totally agree with you on the lights issue.. I had to move to a back patio to offset a WNW wind that was blowing and the lighting was horrible.
We also got a late start and it got dark on us...
Should have some special lighting in place for the next one;-)
