As a kid I cleaned and flilleted fish for tips on head boats around the L.A. California harbor. I had to do while the small boat is returning to the landing. This in the typical southern Calif afternoon seas of 6 to 8 foot and blowing 20 knts. If you did'nt do a fine clean job, there'd be no tips. To make any decent money you had to cut a lot of fish quick. My pride is - I only cut myself once.
