Saraswat Brahmins ate beef and not eating beef came later when there was a shortage of cattle. In Kashmir, we NEVER ate Beef. Even Kashmiri Muslims to this day do NOT eat Beef(mainly because they are all Pandit converts). If u tell them to eat beef, they will vomit. I myself will never ever knowingly eat beef (though it is sold openly in Mumbai). Mahabharat was fought here,these people were highly advanced in science etc. Vedic study only happened in valley of kashmir but Vedas were recited & written along with other puranas by ved vyas. Vedas were compiled in Peshawar. Our history in Kashmir (named after a saraswat brahmin) is around 5000 yrs. We Saraswat Brahmins ate Beef before that, but because cows gave us a lot, we started to regard them as "off-limits." Over time, there was also a shortage of cattle....But we never ever worshipped Cows, we just respected them...like in the west, they respect dogs/cats, but neither worship dogs/cats(nor eat them). We pandits also don't worship rats like they do in Rajasthan.

Kurukshetra is NOT in punjab (and i never said that it was in kashmir either, so don't know why u typed that). Overtime not eating cow happened for 2 reasons: 1) shortage of cattle in South Asia 2) Cow gives us milk (and therefore also curd, butter, cheeses and most importantly GHEE, which we use for Havans/Agni).
