He does it so he can have a custom grip on his stick. If you look closly it is shaved of a little bit. That is exactly what i do with my sticks except i make it narrow in the middle

The wood in the end, is common i heard in the pros, it stops the whole stick from vibrating when the puck hits it, and gets rid of some of the "tin feel" of the one-piece stick. Im not sure if this is 100% true.

Most sticks now have the flex rating written on it at different points, so you can see if you cut it such and such a length, it will be such and such flex.
