I think they leave the vocals tracks in there as a reference to their ears so they can match pitch with the original artist. Its a lot easier than singing without it as you'll have to know the song's pitches by heart. But you're right I would like to hear people's voices alone.

This sounds like you've got hardwood floors or something other than carpet because there is a little reverberation. If you lay down a rug or blanket on the floor it will help reduce the reverb and allow the camera mic to pick up a more pure sound and show off that amazing voice.
