after watching this video , I made this cornbread tonight at dinner, I love it easpecially that i don't like sweet cornbread, I used regular cornmeal, did you use stone-ground? i only have one complaint about all cornbread recipes , they always dry no moist on them, what do you serve it with? thanks

How well does a substitution of sour milk (milk with a small amount of lemon juice or vinegar mixed in) work if you cannot find buttermilk in the supermarkets?

I use about a spoonful or two of honey, ginger powder, and top it off with cinnamon. A touch of cornstarch and vanilla extract will keep it cohesive and add a bit more flavor.

This recipe sounds like it needs some tweaking. She said it's an "unsweetened corn bread," but a corn bread usually needs just a slight amount of sugar (about 3 tablespoons). The teaspoon of salt in this recipe is also too much. I would omit the salt. If you must have salt, I would decrease it to 1/2 teaspoon. Nothing is worse than a dish which is oversalted.
Somebody replied that 3 tablespoons of sugar would turn this cornbread into cake. This is hardly true. I have tried many cornbread recipies, with the sugar content ranging from 1 tablespoon to 2/3 cup, depending on how sweet one likes his or her cornbread. Cake recipes usually call for 1 1/2 to 2 cups of sugar.
so 450 for roughly20-25min..4 Tb butter in skillet until melted 3-5min (10in or 9in square pan)...1 1/2 C corn meal, 1C flour, 2 ts. baking powder,1ts salt....2 eggs, 1 3/4 C buttermilk, large pinch salt...add butter to egg mix...then addhtat to dry ingredients....mix until lumpy and flour moisened!

You don't use flour or baking powder or sugar in traditional Southern cornbread!

I use the recipe on the back of Dixie Mills stone ground corn meal from Rome, Georgia.
