i dont have the tilt head stand mixer, i have the older model that has the two arms to attach to fins on the side of the bowl, can i still use this with my mixer?
@pootinhammer Yes, you can, and there's a video here for that, but it won't let me link to it. Do a search for Kitchenaid bowl lift ice cream, and you'll see it.
If I get this, I'll probably try to store the mixing bowl with dry ice in a cooler before I start to make the ice cream. You can get dry ice at any good grocery store.
@markpianoman As I mentioned above, in order for ice cream to freeze correctly, it will need to be frozen quite quickly. Stores that make their own ice cream generally have a blast chiller that cools it down quickly before any perceivable amount of those ice crystals can form.
Chefs in very fine restaurants even occasionally use extremely cold substances such as liquid nitrogen to freeze the ice cream very quickly so that those ice crystals never materialize.
@Alex40869 Ice cream generally should be blast-frozen at very low temperatures (-40 degrees Fahrenheit or so) for a short time. Then, it should be stored at -20 degrees Fahrenheit, and served at -5 degrees Fahrenheit.
I suppose you can eat it when it first comes out, as it will be very light and creamy. Good luck!

I would recommend storing it in a freezer for at least an hr before serving.

Looks to me that the ice cream never gets firm enough...and if you put it in the freezer it starts to get ice crystals.
