  • @balamithra90 : Yes, you can use fresh tomatoes! You can substitute with 4-5 tomatoes.

  • @hijklmnop36 : for the people who have a very sharp taste sense, yes, they will be able to tell the difference. This recipe has so many spices and additional flavors, it is easy to mask that.

  • After all the pressure cooking and pan cooking - I think there's still a little nutrition left in those Channa. Better cook em again.

  • I can assure you that you can make channa with fewer steps. Use fresh tomatoes. All you need is channa masala powder for spice sold in Indian stores and skip the rest. Freshly chopped onions is key. Hot green chillies are optional. Add ginger to the stir fry if you like. Keep the tea bag out.

    Don't let this presentation deter you from trying your own variation. Put the dry beans on a slow cooker in the garage or patio if you don't want the house to smell -- not offensive, your call.

    If you are using canned peas, you can let your pressure cooker whistle just once and switch it off. It will help the peas absorb the flavors from the sauce. Yes, if you like, you can add onions. Be sure to cook the onions until they are golden brown before adding the tomatoes.

  • Hi! Having a hard time finding channa masala--is it called something else? I thought the dish was called channa masala--there's a spice too? : )

    You can find a blend of spices (usually found in boxed form at your local Indian grocery store) called "Chana Masala" or "Chole Masala".

  • Hi Girls, I was wondering if you could help me with 1 question. Even if i lower the flame after 2/3 whistles, it keeps whistling for few times. Is okay to keep continuing the whisling on low flame? or if it happens do you still recommend simmering for 20min or shud i reduce simmer time in that case. Thanks a lot!

  • This looks absolutely wonderful, but I wouldn't use the water that the chickpeas were soaked in unless you really, really want to have gas. I'll use the water they were cooked in for the reduction step though. Five stars.

  • This is how my mom has made Chole Masala since I was a kid. She learned it from a lady in Punjab nearly 30 years ago. The only difference is that we also add whole cardamom (in addition to the black cardamom) and a small piece of whole ginger in the pressure cooker stage. The tea bags, the anardana and everything else is the same!

    My mom tells me that even when tea bags were uncommon in India, people would tie black tea leaves in a thin cloth and use it for coloring the chick peas.

  • Plain black tea will work great. If you are worried about caffeine, then you can use decaffeinated black tea bags as well.

  • This recipe serves 6-8 people, so we suggest you triple the recipe.

    Try this dish, it has a fantastic flavor and you'll forget that there are no onions in the Channas.
