Never have seen anyone let dough rise of any type for 3 hrs especially pizza dough. Even if you use regular active yeast and not the quick rise the longest is about 1 hr 15 mins. You can over proof your dough and have an inferior product, not a light airy crust with a soft chew and crispy exterior. Since he didn't know better than to "grate" buffalow mozzarella must not know about dough either. At least he did good on the peel and stone..lol
At my school we use pesto sauce and we add salt at the end when we pull it. Also i grill my dough and flatten it out with a roller get all that air out.

I suppose you're right. It just saddens me that so many italian americans don't seem to care about preserving a language that should be their birthright. I see it even in my own family.
It's understandable though, especially when Italy and Italian has little relevance to their daily lives. Emigration is conscious rejection of a country's economic framework that also entails separation from its cultural framework. It's better to be good Americans than trying to cling desperately to shreds of the "Old Country" IMO. But I admire your sentiment nonetheless.
I definitely dont advocate americans calling themselves "italian" or acting as if they are italian just because their name ends in a vowel. I simply think knowing multiple languages is a good thing and it is sad when people elect to toss one away, whatever it may be. It also seems to me a thing italian americans do much more readily than americans from other groups; greeks, russians, hispanics, etc.
I wholeheartedly agree that knowing multiple languages is quite advantageous. But at one point in time it was seen as subversive and not helpful in trying to construct an American identity. I think Italian Americans are much more wasteful with their cultural heritage because it wasn't always good to be an Italian (kind of like how German Americans rarely retain any shred of ethnic identity) and the necessity to integrate was impressed upon them by American authorities and society.
Yes you are right, and I would guess it is no surprise those two groups in particular suffered the most "self hate" in America, considering the US was in a declared war with them in WWII.
